INGREDIENTS

2 fresh eggs
One pinch sea salt
1 teaspoon extra virgin olive oil

1 teaspoon butter

2 tortillas or Arabic pita breads
70 g barrel-aged feta cheese
1 ripe avocado
70 g cherry tomatoes
1 spoonful finely chopped fresh parsley

a dash of crushed red pepper flakes for serving

PREPARATION

In a bowl, season the eggs with salt and pepper and beat until frothy.
In a frying pan over medium heat, heat up the olive oil and the butter and add the eggs. Stir constantly until moist and puffy. Transfer to a plate.
In the same pan, heat up the tortilla until softened and slightly browned.

Sprinkle some crumbled feta on half of its surface. Finely chop the avocado and add over the feta. Add the eggs, cherry tomatoes, and more feta. Finish with the parsley.
Fold the empty half over and let cook for 1–2 minutes on each side, until browned and crunchy.
Transfer to a cutting board, let sit for a bit to let it settle, and cut into two pieces.
Serve immediately, garnished with some more feta and crushed red pepper flakes.
