Popi Bezante

Refreshing and authentic, this combination of Greek salad (horiatiki) and tzatziki offers a truly unique flavour.

-Ingredients:

200 g medium orzo, boiled

100 g feta cheese, crumbled

1 cucumber, finely chopped

1 tomato, finely chopped

50 g Kalamata olives

1 green bell pepper, finely chopped

1 onion, finely chopped

½ bunch parsley, finely chopped

Olive Oil

Salt

Pepper

*optionally, a few carob rusks

-For the tzatziki sauce:

120 g strained yogurt

3 garlic cloves, crushed

1 tablespoon vinegar

2 tablespoons finely chopped dill

Salt

Pepper

-Preparation:

Boil the orzo according to the instructions on the packet. Strain, let cool, and drizzle with some oil to create a slight glaze. In a salad bowl, toss together all the ingredients. In a smaller bowl, add the ingredients for the tzatziki sauce. Finish off by bringing together the two salads and adjust for taste with salt, pepper, and olive oil.
