Antigone Kouloukakou
Nutritious and low in calories, for any time of day!
Ingredients:
250 g fresh green beans
1 cucumber
1 can tuna in water
Some radishes
Coarse salt
Olive Oil
A little lemon juice
Preparation:
Boil the green beans for a few minutes. Once blanched and al dente, strain and immediately transfer to a salad bowl. Add to the bowl the cucumber chopped into rounds, the tuna and some radishes, also chopped into rounds. Add the salt, olive oil and lemon juice, and toss well. Finish with some pumpkin and sunflower seeds. This salad can be served as both a main course and a side dish. Ideally though, it should be eaten with lalaggia from Mani.
