Chios Adas\u0131\u2019n\u0131n g\u00fcneyinde e\u015fsiz bir b\u00f6lge vard\u0131r. Kayal\u0131k toprak, al\u00e7ak ta\u015f duvarlar ve yabani kekikle kapl\u0131 bu al\u00e7ak tepelerde, y\u00fczy\u0131llard\u0131r muhte\u015fem sak\u0131z a\u011fac\u0131 (Pistacia lentiscus var. chia<\/em>) yeti\u015fir. G\u00f6vdesinden Chios sak\u0131z\u0131n\u0131n e\u015fsiz bir aroma ve tarihe sahip do\u011fal re\u00e7inesi olan, \u015feffaf \u2018g\u00f6zya\u015flar\u0131\u2019 akar.<\/p>\n\n\n\n

\u00dcretimin kalbi, adan\u0131n g\u00fcney kesiminde bulunan 24 geleneksel yerle\u015fim yeri olan Mastihohoria’da (Sak\u0131z k\u00f6yleri) atar. Burada, \u00f6zel mikro iklim, toprak yap\u0131s\u0131 ve insanlar\u0131n deneyimleri, d\u00fcnyan\u0131n ba\u015fka hi\u00e7bir yerinde ayn\u0131 \u015fekilde \u00fcretilemeyen bir \u00fcr\u00fcn\u00fcn do\u011fmas\u0131 i\u00e7in ideal ko\u015fullar\u0131 yarat\u0131r. Y\u00fczy\u0131llard\u0131r Pirgi, Mesta, Olimpi ve Armolia gibi k\u00f6ylerin sakinleri, atalar\u0131ndan \u00f6\u011frendikleri tekniklerle neredeyse hi\u00e7 de\u011fi\u015fmeyen bir tempoda sak\u0131z a\u011fac\u0131 yeti\u015ftirir. Ta\u015f evleri, dar sokaklar\u0131 ve g\u00f6rkemli kuleleriyle bu yerle\u015fim yerleri, sak\u0131z\u0131n \u00e7ok de\u011ferli oldu\u011fu ve korunmas\u0131n\u0131n gerekti\u011fi, t\u0131pk\u0131 Bizans ve Osmanl\u0131 d\u00f6nemlerinde oldu\u011fu gibi bir d\u00f6nemin havas\u0131n\u0131 h\u00e2l\u00e2 korur.<\/p>\n\n\n\n

\u00dcretimi bug\u00fcn bile neredeyse rit\u00fcel bir nitelik ta\u015f\u0131r. Yaz aylar\u0131nda sak\u0131z \u00fcreticileri a\u011fa\u00e7 g\u00f6vdesini dikkatlice \u00e7izdikten sonra damlalar\u0131n beyazlat\u0131lm\u0131\u015f topra\u011fa akmas\u0131na sa\u011flar. Sonras\u0131nda da bu damlalar g\u00fcne\u015fin alt\u0131nda kat\u0131la\u015f\u0131r. Ard\u0131ndan sab\u0131r, ustal\u0131k ve do\u011faya sayg\u0131 gerektiren bir s\u00fcre\u00e7 olan bu de\u011ferli \u2018g\u00f6zya\u015flar\u0131n\u0131n\u2019 toplanmas\u0131 ve temizlenmesi gelir.<\/p>\n\n\n\n

G\u00fcn\u00fcm\u00fczde Chios sak\u0131z\u0131, gelenek ve yenili\u011fi birle\u015ftirerek geli\u015fmeye devam etmektedir. Say\u0131s\u0131z tuzlu ve tatl\u0131 tarif, dondurmalar, lik\u00f6rler, geleneksel \u00e7evirme tatl\u0131s\u0131, hatta sak\u0131zl\u0131 su veya kozmetik \u00fcr\u00fcnleri ve tabi ki de sindirim ba\u015fta olmak \u00fczere do\u011fal sa\u011fl\u0131k takviyeleri. Sak\u0131z, nesiller boyu Chios topraklar\u0131n\u0131n ve halk\u0131n\u0131n yarat\u0131c\u0131 azminin canl\u0131 bir sembol\u00fc olmaya devam ediyor.
