Zamanla, Tun\u00e7 \u00c7a\u011f\u0131\u2019nda (M.\u00f6. 4.\u20132. biny\u0131l) mutfaklar\u0131na bakla, \u00e7e\u015fitli m\u00fcrd\u00fcm\u00fckler, daha nadir olarak da nohut gibi t\u00fcrler eklemi\u015flerdir. Tarihsel d\u00f6nemlerde (M.\u00f6. 1. biny\u0131l) ise nohut, M.\u00f6. 7. biny\u0131ldan itibaren Yunanistan\u2019da yeti\u015ftirilip t\u00fcketilen mercimekle birlikte \u00e7ok sevilen bir baklagil haline gelmi\u015ftir. Bu d\u00f6nemde ayr\u0131ca ac\u0131 bakla ve <em>dolihos<\/em> ya da <em>fasilos<\/em> ad\u0131 verilen bir fasulye t\u00fcr\u00fc gibi yeni baklagil t\u00fcrleri de mutfaklara girmi\u015ftir. Teofrastos (M.\u00f6. 4.\u20133. y\u00fczy\u0131l) <em>Bitkilerin Tarihi Hakk\u0131nda<\/em> adl\u0131 eserinde,<em> dolihos<\/em> kelimesine kar\u015f\u0131l\u0131k gelen bitkinin \u00f6zelliklerinin tasvir ederek, <em>Bitkilerin Tarihi Hakk\u0131nda<\/em> adl\u0131 eserinde bitkinin uzun sopalarla desteklendi\u011finde meyve verdi\u011fini belirtir. Theofrastos ayr\u0131ca <em>dolihos<\/em>\u2019un, o d\u00f6nemde bilinen di\u011fer baklagillerden, yani nohut, bur\u00e7ak, mercimek, sar\u0131 bakla, bezelye, m\u00fcrd\u00fcm\u00fck, bakla ve ac\u0131 bakladan farkl\u0131 bir bitki oldu\u011funu vurgular. Buna g\u00f6re, <em>dolihos<\/em> t\u0131rman\u0131c\u0131 bir baklagil olup, tohum \u00fcretimi amac\u0131yla yeti\u015ftirildi\u011finde desteklenmesi gerekir. <em>Dolihos<\/em>\u2019a ilk kez Hipokratik metinlerde (M.\u00f6. 5.\u20134. y\u00fczy\u0131l) rastlan\u0131r; burada sar\u0131 baklayla (bir t\u00fcr m\u00fcrd\u00fcm\u00fck) birlikte, bakla ve bezelyeye k\u0131yasla daha besleyici ve kolay sindirilebilir iki t\u00fcr olarak belirtilir. Teofrastos, <em>dolihos<\/em>\u2019un insanlarda di\u011fer baklagillere g\u00f6re daha az gaz yapt\u0131\u011f\u0131 gibi olumlu besinsel \u00f6zelliklerini de kaydeder. Komedya \u015fairi Anaksandridis (M.\u00f6. 4. y\u00fczy\u0131l), <em>dolihos<\/em>\u2019u bakla, m\u00fcrd\u00fcm\u00fck ve sar\u0131 baklayla birlikte bir baklagil listesinde sayar. Galinos d\u00f6neminde ise <em>dolihos<\/em> teriminin yeti\u015ftirilirken destek gerektiren bir baklagil olan <em>fasilos<\/em>\u2019la ayn\u0131 anlama geldi\u011fi g\u00f6r\u00fcl\u00fcr. Antik metinlerde <em>dolihos<\/em>\u2019tan oduk\u00e7a az bahsedilir ve genellikle bu baklagilin tohumlar\u0131n\u0131n, \u00e7o\u011fu Neolitik \u00c7a\u011f\u2019dan beri bilinen di\u011fer baklagiller gibi pi\u015firildi\u011fi belirtilir.<\/p>\n\n\n\n<p>G\u00fcn\u00fcm\u00fczde kuru tohum halinde sat\u0131lan b\u00f6r\u00fclce \u00e7o\u011fu kez d\u00fcnyan\u0131n di\u011fer b\u00f6lgelerinden ithal edilmektedir. Buna ra\u011fmen, Yunan mutfa\u011f\u0131n\u0131n geleneksel yemeklerinde \u00e7ok sevilen bir malzemedir ve \u00e7e\u015fitli \u015fekillerde pi\u015firilir. Pontus\u2019un Santa b\u00f6lgesinden mavromatosirv, b\u00f6r\u00fclce ve k\u0131r\u0131k bu\u011fdayla yap\u0131lan bir tariftir. Peloponissos, Kiklad Adalar\u0131 ve baz\u0131 \u0130yon Adalar\u0131\u2019ndaysa b\u00f6r\u00fclce paz\u0131 ve di\u011fer ye\u015filliklerle pi\u015firilir.
