Ta\u015f el de\u011firmenlerinde \u00f6\u011f\u00fct\u00fclm\u00fc\u015f bu\u011fday veya arpa unu bir\u00e7ok farkl\u0131 tarife d\u00f6n\u00fc\u015ft\u00fcr\u00fclebiliyordu. Baz\u0131 tarifler hamurun ya\u011fda, genellikle g\u00fcn\u00fcm\u00fcz\u00fcn k\u0131zartma tavas\u0131na benzer bir kapta k\u0131zart\u0131lmas\u0131n\u0131 gerektiriyordu. Antik metinlerde rastlad\u0131\u011f\u0131m\u0131z k\u0131zarm\u0131\u015f hamur tariflerinden birinin ad\u0131 egris\u2019tir. Bu kelimeye dair en eski referans arkaik d\u00f6nemlere kadar uzan\u0131r. Kelimeye yap\u0131lan at\u0131fta bulunan, M.\u00f6. 7. y\u00fczy\u0131lda ya\u015fam\u0131\u015f \u015fair Stisihoros\u2019un dizelerini aktaran Athenaeus olmu\u015ftur. Hatta Athenaeus egris\u2019in ya\u011fda kaynat\u0131lm\u0131\u015f ve ard\u0131ndan balla kaplanm\u0131\u015f hamurdan yap\u0131lan bir tatl\u0131 oldu\u011funu belirtir. Aristofanes ve di\u011fer komedya eserleri \u015fairleri bu tatl\u0131lar\u0131n uzman sat\u0131c\u0131lar\u0131na at\u0131fta bulunur.<\/p>\n\n\n\n<p>Antik Yunan&#8217;da, pi\u015firildi\u011finde s\u0131k\u0131la\u015fan sulu hamurun bir ba\u015fka \u015fekli de <em>itrion<\/em> ad\u0131yla bilinirdi. M.\u00f6. 7. y\u00fczy\u0131l kadar erken bir tarihte antik metinlerde, Solon ve Anakrion&#8217;un \u015fiirlerinde bu kar\u0131\u015f\u0131mdan bahsedilir. Solon \u015fiirlerinden birinde, kahvalt\u0131da k\u00fc\u00e7\u00fck bir <em>itrion<\/em> par\u00e7as\u0131 yedi\u011finden bahseder. Bu kar\u0131\u015f\u0131mdan ba\u015fka birka\u00e7 yazar daha bahsetse de hamurun nas\u0131l pi\u015firildi\u011fine dair net bir bilgi yoktur. Pitanili Matrona&#8217;n\u0131n dizelerindeki bir benzetme, itrion\u2019lar\u0131n alt\u0131n sar\u0131s\u0131 bir renge sahip oldu\u011funu ifade etti\u011fi \u015feklinde yorumlanabilir. \u0130trion\u2019lar\u0131n pi\u015firme s\u0131ras\u0131nda s\u0131k\u0131la\u015fan sulu hamurdan yap\u0131ld\u0131\u011f\u0131 ger\u00e7e\u011fini hekim Galinos\u2019tan \u00f6\u011freniyoruz. Bunu M.s. 2. Y\u00fczy\u0131l gibi \u00e7ok daha ge\u00e7 tarihli riimata ve lagana olarak bilinen kar\u0131\u015f\u0131mlarla ilgili ifadelerinde belirtiyor. Bu kar\u0131\u015f\u0131mlar\u0131n varsay\u0131lan alt\u0131n-kahverengi renginin, sulu hamurun ya\u011fda k\u0131zart\u0131lmas\u0131yla ilgili olup olmad\u0131\u011f\u0131n\u0131 hi\u00e7bir zaman kesin olarak \u00f6\u011frenemeyece\u011fiz.<\/p>\n\n\n\n<p>G\u00fcn\u00fcm\u00fczde Yunan mutfa\u011f\u0131nda, \u00e7o\u011funlukla bu\u011fday unu ve suyla yap\u0131lan gev\u015fek bir hamurun k\u0131zart\u0131lmas\u0131yla yap\u0131lan \u00e7ok \u00e7e\u015fitli yemek ve tatl\u0131 vard\u0131r. Antik \u00e7a\u011flar\u0131n tatl\u0131s\u0131 egris, bol ya\u011fda k\u0131zart\u0131lan sulu bir hamurdan yap\u0131lan g\u00fcn\u00fcm\u00fcz lokmas\u0131na \u00e7ok benzer. Yunanistan&#8217;\u0131n \u00e7e\u015fitli b\u00f6lgelerinde yap\u0131lan kserotigana, diples ve otia, \u00f6nce bir yufka halinde a\u00e7\u0131l\u0131r ve ya\u011fda k\u0131zart\u0131lmadan \u00f6nce veya k\u0131zartma s\u0131ras\u0131nda \u00f6zenle sar\u0131lan hamurdan yap\u0131l\u0131r. Eklenen bal, bu tatl\u0131lar\u0131 antik d\u00f6nem tatl\u0131lar\u0131na yakla\u015ft\u0131rmaktad\u0131r. Mani\u2019nin lalagia\u2019s\u0131 veya Yunanistan ana karas\u0131n\u0131n lalagites\u2019ine gelince, antik d\u00f6nem \u015fiirlerin hayal etmemize izin verdi\u011fi gibi, kesinlikle
