Genellikle k\u00fc\u00e7\u00fck bal\u0131klar\u0131n k\u0131zart\u0131ld\u0131\u011f\u0131 bu kap, tiganitis (hamur k\u0131zartmas\u0131) gibi di\u011fer yemekler i\u00e7in de kullan\u0131l\u0131rd\u0131. En az\u0131ndan antik Yunan \u00e7a\u011flar\u0131ndan beri var olan, hamuru k\u0131zg\u0131n ya\u011fda pi\u015firme fikrinin k\u00f6kleri, Neolitik Yunanistan&#8217;a kadar uzanan tarih \u00f6ncesi yerle\u015fimlerde s\u0131\u011f, a\u00e7\u0131k seramik kaplar\u0131n bulunmu\u015f olmas\u0131ndan dolay\u0131 \u00e7ok daha eski olabilir.<\/p>\n\n\n\n<p>Yunanistan&#8217;da M.\u00f6. 7. biny\u0131l\u0131n ba\u015flar\u0131nda \u00e7ok \u00e7e\u015fitli bu\u011fday ve arpa t\u00fcrleriyle ba\u015flayan tah\u0131l yeti\u015ftiricili\u011fi \u00e7ok eski bir uygulamad\u0131r. Yunanistan sakinlerinin temel besin maddesi olan bu iki t\u00fcr, tarih \u00f6ncesi \u00e7a\u011flarda bile \u00f6\u011f\u00fct\u00fclerek un \u015feklinde su, s\u00fct, \u015farap, bal gibi \u00e7e\u015fitli malzemelerle kar\u0131\u015ft\u0131r\u0131larak etkileyici bir tarif \u00e7e\u015fitlili\u011fi yarat\u0131yordu. Antik \u00e7a\u011flardaki hamurlar \u00e7e\u015fitli \u015fekillerde pi\u015firilerek ekmek, b\u00f6rek ve hamurun k\u0131zg\u0131n ya\u011fda pi\u015firilmesini gerektiren \u00f6zel tariflere d\u00f6n\u00fc\u015ft\u00fcr\u00fclebiliyordu. Bunlar \u00e7e\u015fitli t\u00fcrlerde hamur k\u0131zartmas\u0131 i\u00e7eren tariflerdi.<\/p>\n\n\n\n<p>Antik \u2018<em>tiganitis<\/em>\u2019 (hamur k\u0131zartmas\u0131) kelimesine M.\u00f6. 6. y\u00fczy\u0131l gibi erken bir tarihte \u015fair Hipponaks&#8217;\u0131n eserinde, daha sonra da bir antik \u00e7a\u011f komedyas\u0131nda rastlan\u0131r. Hatta antik komedyada Girit&#8217;in kserotigano\u2019sunu (kuru hamur) hat\u0131rlatan susaml\u0131 hamur k\u0131zartmas\u0131na at\u0131fta bulunulmaktad\u0131r. <em>Tiganitis<\/em> kelimesi s\u0131v\u0131 ya\u011f ya da kat\u0131 ya\u011f kullan\u0131larak tavada k\u0131zart\u0131lan bir hamur anlam\u0131na gelir. Nitekim Galinos eserinde bunlar\u0131n nas\u0131l yap\u0131ld\u0131\u011f\u0131n\u0131 anlat\u0131r. Antik \u00e7a\u011f\u0131n bu ba\u015far\u0131l\u0131 hekimine g\u00f6re hamur k\u0131zartmas\u0131; tavan\u0131n duman \u00e7\u0131karmayan bir ate\u015f \u00fczerine yerle\u015ftirilip i\u00e7ine ya\u011f konulmas\u0131, \u0131s\u0131nd\u0131\u011f\u0131nda da hamurun ya\u011f\u0131n i\u00e7ine d\u00f6k\u00fclmesiyle yap\u0131l\u0131rd\u0131. Galinos\u2019un bu\u011fday unuyla bol su kar\u0131\u015f\u0131m\u0131 olarak tarif etmesinden bu hamurun olduk\u00e7a ince oldu\u011funu anl\u0131yoruz. Hatta bu hamurun ya\u011fda pi\u015firildi\u011finde h\u0131zla k\u0131vam de\u011fi\u015ftirerek, sepetlerde kat\u0131la\u015fan yumu\u015fak peynire benzedi\u011fi ifade edilir. Bu noktada Galinos, hamurun alt taraf\u0131 pi\u015fecek \u015fekilde ters \u00e7evrilmesi gerekti\u011fini ve bu i\u015flemin hamur tamamen pi\u015fene kadar iki ya da \u00fc\u00e7 kez
