Yunanistan&#8217;da yabani olarak yeti\u015fen asma 6000 y\u0131l \u00f6nce i\u015flenmeye ve evcille\u015ftirilmeye ba\u015flanm\u0131\u015ft\u0131r. Yunanistan \u015farap tanr\u0131s\u0131 Dionisos&#8217;u, tanr\u0131 Dionisos kutlamalar\u0131 da antik tiyatro ve sempozyumu do\u011furmu\u015ftur. Asman\u0131n arma\u011fan\u0131 olan \u00fcz\u00fcm\u00fcn, kutlamalar ve ziyafetlerin temel malzemesi olan \u015faraba d\u00f6n\u00fc\u015ft\u00fcr\u00fclmesinin yan\u0131 s\u0131ra Antik Yunan&#8217;da \u00fcz\u00fcmden kuru \u00fcz\u00fcm de yap\u0131l\u0131rd\u0131. Son derece tatl\u0131 ve besleyici bu meyvenin kurutulmu\u015f hali, g\u00fcn\u00fcm\u00fcz g\u0131da teknolojisinin muhafaza olanaklar\u0131n\u0131n bulunmad\u0131\u011f\u0131 antik \u00e7a\u011flarda son derece \u00f6nemli olan uzun raf \u00f6mr\u00fcne sahip temel bir besin maddesiydi.<\/p>\n\n\n\n<p>Hesiodos (M.\u00f6. 8.\/7. y\u00fczy\u0131l) \u0130\u015fler ve G\u00fcnler (609-614) adl\u0131 eserinde, tatl\u0131 \u015farap \u00fcretmek i\u00e7in \u00fcz\u00fcmlerin bir t\u00fcr kuru \u00fcz\u00fcm olarak kurutulmas\u0131 i\u00e7in talimatlar verir: Salk\u0131mlar toplan\u0131p \u00e7ift\u00e7inin evine g\u00f6t\u00fcr\u00fcld\u00fckten sonra on g\u00fcn boyunca g\u00fcne\u015fte b\u0131rak\u0131lmal\u0131yd\u0131. Sonras\u0131nda be\u015f g\u00fcn daha g\u00f6lgelik bir yere konmal\u0131yd\u0131lar. Toplam 15 g\u00fcn s\u00fcren bu kurutma i\u015fleminden sonra, \u00fcz\u00fcmlerin g\u00f6lgede kald\u0131\u011f\u0131 alt\u0131nc\u0131 g\u00fcnde, \u00fcz\u00fcmler toprak bir kaba konarak suyu \u00e7\u0131kar\u0131lmal\u0131yd\u0131. Hatta Hipokrat&#8217;a (M.\u00f6. 5.\/4. y\u00fczy\u0131l) g\u00f6re, Hastal\u0131klar \u00dczerine adl\u0131 eserinde kuru \u00fcz\u00fcm\u00fcn \u015farap yap\u0131m\u0131nda kullan\u0131ld\u0131\u011f\u0131na dair farkl\u0131 bir referans daha vard\u0131r.<\/p>\n\n\n\n<p>Dilos Adas\u0131\u2019nda, kuru \u00fcz\u00fcm\u00fcn adada tanr\u0131 Poseidon onuruna d\u00fczenlenen festivallerin temel g\u0131dalar\u0131ndan biri oldu\u011funu belirten yaz\u0131tta kuru \u00fcz\u00fcm ve dini t\u00f6renler aras\u0131ndaki ba\u011flant\u0131 a\u00e7\u0131k\u00e7a ifade edilmektedir. Ba\u015fka bir yaz\u0131ttaysa siyah kuru \u00fcz\u00fcm\u00fcn Kral Kiros, saray halk\u0131 ve askerleri i\u00e7in haz\u0131rlanan g\u0131da maddeleri listesinde yer ald\u0131\u011f\u0131n\u0131 g\u00f6r\u00fcyoruz. Vergina Akropol\u00fc&#8217;nde M.\u00f6. 2. ve 1. y\u00fczy\u0131llar aras\u0131na ait, k\u00f6m\u00fcrle\u015fmi\u015f kuru \u00fcz\u00fcmler bulunmu\u015ftur.<\/p>\n\n\n\n<p>Bug\u00fcn oldu\u011fu gibi eski zamanlarda da kuru \u00fcz\u00fcm, Akdeniz g\u00fcne\u015finin yak\u0131c\u0131 \u0131\u015f\u0131nlar\u0131 sayesinde tanelerinin de\u011ferli bile\u015fenlerini uzun raf \u00f6mr\u00fcne sahip bir formda yo\u011funla\u015ft\u0131r\u0131yordu. Ancak o zamanlar, kuru \u00fcz\u00fcmlerde g\u00fcn\u00fcm\u00fcz g\u0131da teknolojisinin gerektirdi\u011fi ekstra koruyucular bulunmazd\u0131. \u0130ncir ve balla birlikte, kalori ve besin de\u011ferleri ve tatl\u0131 lezzetlerinin verdi\u011fi tatmin sebebiyle antik \u00e7a\u011f\u0131n az say\u0131daki tatl\u0131 yiyecek ve bile\u015fenlerden biri olan kuru \u00fcz\u00fcm
