Tah\u0131llar, bu\u011fday ve arpa, Yunanistan ve genel olarak Akdeniz b\u00f6lgesi sakinlerinin beslenmesinin temel bile\u015fenleriydi ve \u00f6yle olamaya devam etmektedir. Arkeobotanik kal\u0131nt\u0131lar binlerce y\u0131ld\u0131r her t\u00fcr bu\u011fday\u0131n varl\u0131\u011f\u0131n\u0131 belgelerken, antik metinlerse baz\u0131lar\u0131 s\u0131radan ve g\u00fcnl\u00fck, baz\u0131lar\u0131ysa bir tanr\u0131ya tap\u0131nma veya d\u00fc\u011f\u00fcn t\u00f6reni ba\u011flam\u0131nda haz\u0131rlanan \u00f6zel ekmekler gibi dini ve sosyal \u00f6zel g\u00fcnler i\u00e7in tasarlanan unlu mamullere \u0131\u015f\u0131k tutmaktad\u0131r.<\/p>\n\n\n\n

M.\u00f6. 6. y\u00fczy\u0131lda bir ziyafet i\u00e7in haz\u0131rlanan ekmekler aras\u0131nda, keten tohumuyla yap\u0131lan ekmekler mevcuttur. \u015eair Alkman bir \u015fiirinin dizelerinde, yedi ayr\u0131 masada sunulan ve muhtemelen d\u00fc\u011f\u00fcn gibi bir kutlamada yenmesi ama\u00e7lanan bol miktarda unlu mamulle birlikte, gelincik tohumuyla mayalanm\u0131\u015f ekmekler ve ziyafete kat\u0131lan k\u00fc\u00e7\u00fck \u00e7ocuklar i\u00e7in ball\u0131 k\u00fc\u00e7\u00fck ekmeklerden bahseder.<\/p>\n\n\n\n

Ancak bu referans d\u0131\u015f\u0131nda, antik metinlerde bir g\u0131da olarak ketene yap\u0131lan at\u0131flar \u00e7ok s\u0131n\u0131rl\u0131d\u0131r. Komedya tarz\u0131 \u015fiirlerde bulunan en sevilen ve yayg\u0131n g\u0131dalar listelerinde bir beslenme bile\u015feni olarak yer almamaktad\u0131r. Bu durum, Galinos\u2019un (M.\u00f6. 2. y\u00fczy\u0131l) keteni sindirilemeyen ve besin de\u011feri d\u00fc\u015f\u00fck bir g\u0131da olarak tan\u0131mlamas\u0131yla bir araya geldi\u011finde, ketenin Antik Yunan’\u0131n temel g\u0131dalar\u0131ndan biri olmad\u0131\u011f\u0131n\u0131n tahminine yol a\u00e7ar. \u00d6te yandan, Hipokrat metinlerinde (M.\u00f6. 5.-4. y\u00fczy\u0131l) ketenin besleyici, kanamay\u0131 durdurucu ve ferahlat\u0131c\u0131 oldu\u011fu d\u00fc\u015f\u00fcn\u00fclerek lapa veya i\u00e7ecek olarak kullan\u0131m\u0131na s\u0131k\u00e7a at\u0131fta bulunulmaktad\u0131r. Bu, keten tohumlu d\u00fc\u011f\u00fcn ekmeklerine yap\u0131lan at\u0131fla birle\u015fti\u011finde, Galinos\u2019tan \u00f6nceki d\u00f6rt y\u00fczy\u0131lda ketenle ilgili ba\u015fka bir g\u00f6r\u00fcnt\u00fc ortaya koyar. G\u00f6r\u00fcn\u00fc\u015fe g\u00f6re keten besleyici bir maddeydi ve Antik Yunan’da balla birlikte t\u00fcketiliyor ya da ekmek olarak unla yo\u011fruluyordu. Tarih \u00f6ncesi \u00e7a\u011flardan beri ketenin hem Kuzey hem de G\u00fcney Yunanistan’daki yerle\u015fim yerlerinde varl\u0131\u011f\u0131, b\u00fcy\u00fck miktarlarda ve saf halde bulunan k\u00f6m\u00fcrle\u015fmi\u015f keten tohumlar\u0131ndan bilinmektedir. G\u00fcn\u00fcm\u00fczde keten tohumu geleneksel Yunan mutfa\u011f\u0131n\u0131n bir bile\u015feni olarak g\u00f6r\u00fclmese de keten tohumlu ekmekler yap\u0131lmakta ve f\u0131r\u0131nlarda sat\u0131lmaktad\u0131r.<\/p>\n\n\n\n
