Yunanistan’\u0131n tarih \u00f6ncesi toplumlar\u0131 i\u00e7in oldu\u011fu kadar tarihi d\u00f6nemler i\u00e7in de temel bir protein kayna\u011f\u0131 olan baklagiller, hem ge\u00e7mi\u015fin yerle\u015fimlerinde yanm\u0131\u015f olarak bulunan tohumlar\u0131n\u0131n kal\u0131nt\u0131lar\u0131ndan hem de antik Yunan metinlerinden g\u00f6r\u00fclebilece\u011fi gibi \u00e7ok \u00e7e\u015fitli t\u00fcrlerde yeti\u015ftirilmi\u015ftir. Ge\u00e7 Tun\u00e7 \u00c7a\u011f\u0131’nda baklagillerin Linear B tabletlerinde yer almamas\u0131n\u0131n sebebi, muhtemelen Miken saraylar\u0131n\u0131n merkezi otoritesinin yaln\u0131zca tah\u0131llar, keten ve incir, asma ve zeytin gibi meyve a\u011fa\u00e7lar\u0131 gibi \u00e7ok \u00f6zel \u00fcr\u00fcnlerle ilgilenmesidir. Ancak o zamanlar bile, \u00f6rne\u011fin Knossos’ta bulunan k\u00f6m\u00fcrle\u015fmi\u015f baklagil kal\u0131nt\u0131lar\u0131n\u0131n g\u00f6sterdi\u011fi gibi, insanlar \u00e7e\u015fitli baklagiller yeti\u015ftirmi\u015ftir. Belki de bakliyat ve s\u0131radan insanlar\u0131n g\u00fcnl\u00fck \u00f6\u011f\u00fcnleri aras\u0131nda eski Yunan metinlerinde buldu\u011fumuz ba\u011flant\u0131n\u0131n k\u00f6keni, tar\u0131msal \u00fcretimin d\u00fczeni ve Miken saraylar\u0131n\u0131n ekonomisiyle \u00f6nemli bir tar\u0131msal \u00fcr\u00fcn\u00fc neyin olu\u015fturdu\u011funa dair d\u00f6nemin alg\u0131lar\u0131na dayanmaktad\u0131r.<\/p>\n\n\n\n

Antik metinlerin tan\u0131kl\u0131k etti\u011fi \u00fczere, bakliyat\u0131n en yayg\u0131n t\u00fcketim \u015fekli ya \u00e7orba ya da lapa \u015feklindeydi. Fakat daha nadir de olsa bakliyat\u0131n \u00f6\u011f\u00fct\u00fcl\u00fcp ekmek yap\u0131m\u0131nda kullan\u0131ld\u0131\u011f\u0131na ya da Antik Yunanistan\u2019daki ad\u0131yla tragima<\/em>, yani at\u0131\u015ft\u0131rmal\u0131k olarak tohumlar\u0131n kavruldu\u011funa dair referanslar da bulunmaktad\u0131r. Hatta bazen tohumlar olgunla\u015fmadan \u00f6nce yumu\u015fak ve tatl\u0131 olarak, yine \u015faraba e\u015flik edecek \u015fekilde, yani tragima<\/em> olarak yenirdi.<\/p>\n\n\n\n

Bakliyat\u0131n t\u00fcketimine dair \u00f6zellikle ilgi \u00e7ekici olan, M.\u00f6. 4. ve 3. y\u00fczy\u0131llar aras\u0131nda ya\u015fam\u0131\u015f olan Theofrastos’un \u2018Bitki Etiolojisi \u00dczerine\u2019 adl\u0131 eserindeki bir referanst\u0131r. Bu kitapta, muhtemelen g\u00fcn\u00fcm\u00fczdeki Limnos Adas\u0131\u2019nda yeti\u015ftirilen afkos<\/em>\u2019a yani Lathyrus<\/em> ochrus<\/em> t\u00fcr\u00fcne kar\u015f\u0131l\u0131k gelen bir baklagilin k\u00f6rpe s\u00fcrg\u00fcnlerinin yiyecek olarak t\u00fcketildi\u011fini okuyoruz. Theofrastos’un d\u00f6neminden y\u00fczy\u0131llar sonra, bu eski beslenme uygulamas\u0131na h\u00e2l\u00e2 Girit Adas\u0131\u2019nda rastlan\u0131r. Adada Lathyrus ochrus <\/em>salata olarak yenmek \u00fczere bah\u00e7elere ekilir, k\u00f6rpe filizleri sofralarda \u00fczerine iri tuz serpilerek bir kadeh rak\u0131yla servis edilir. Bu lezzet g\u00fcn\u00fcm\u00fczde kamblies ya da papules olarak bilinir. Acaba Girit tarifindeki \u2018kamblies\u2019 s\u00f6zc\u00fc\u011f\u00fc, yumu\u015fak filizler i\u00e7in kullan\u0131lan antik \u2018kavlos<\/em>\u2019 kelimesini mi yans\u0131t\u0131yor? Bu yemek Giritliler i\u00e7in o kadar de\u011ferlidir ki, yak\u0131n ge\u00e7mi\u015fte Limnos Adas\u0131\u2019nda afkos<\/em> (Lathyrus ochrus<\/em>) yeti\u015ftiricili\u011fi \u00e7ok yayg\u0131nken, tohumlar Limnos Adas\u0131\u2019ndan Girit’e gemiyle getirilirdi. Bu \u015fekilde Giritliler tohumlar\u0131 ekerek salata olarak yiyebilirlerdi: y\u00fczy\u0131ll\u0131k bir gelene\u011fe ve en az\u0131ndan antik \u00e7a\u011flara dayanan k\u00f6klere sahip, mevsimlik, basit bir yemek.<\/p>\n\n\n\n
