Yunanistan’da arpa, M.\u00f6. 7. biny\u0131l gibi erken bir tarihte ilk \u00e7ift\u00e7ilerin temel \u00fcr\u00fcn\u00fc olmu\u015ftur. Antik Yunanlar\u0131n krtihi<\/em>\u2019si (arpa) g\u00fcn\u00fcm\u00fcz \u00e7a\u011fda\u015f Yunan dilinde krithari<\/em> (arpa) s\u00f6zc\u00fc\u011f\u00fcd\u00fcr. Antik Yunan’da arpa pi\u015firme \u015fekillerinden biri ptisani<\/em> olarak bilinen lapayd\u0131. Hipokrat metinlerinde (M.\u00f6. 5. y\u00fczy\u0131l) g\u00f6rd\u00fc\u011f\u00fcm\u00fcz gibi antik \u00e7a\u011fda iyile\u015ftirici \u00f6zellikleriyle \u00fcnl\u00fc ptisani<\/em> ad\u0131n\u0131, i\u015flenmi\u015f arpa tanesinden olu\u015fan bir bile\u015fen olan ptisani<\/em>\u2019den alm\u0131\u015ft\u0131r. Geoponica\u2019da (M.s. 10. y\u00fczy\u0131l) belirtilen g\u00f6re, lapan\u0131n haz\u0131rlanmas\u0131nda kullan\u0131lan ptisani<\/em>\u2019nin, 1’e 10 oran\u0131nda suyla \u0131slat\u0131lan, ard\u0131ndan samanl\u0131 kabu\u011funu \u00e7\u0131karmak i\u00e7in d\u00f6v\u00fcl\u00fcp g\u00fcne\u015fte kurutulan ve tuz ve samanl\u0131 kabuklar\u0131n\u0131n bir k\u0131sm\u0131yla depolanan i\u015flenmi\u015f arpa tohumuydu. Galinos (M.\u00f6. 2. y\u00fczy\u0131l) Ptisani \u00dczerine ve Yiyeceklerdeki G\u00fc\u00e7ler \u00dczerine adl\u0131 iki eserinde ptisani<\/em>\u2019nin nas\u0131l yap\u0131ld\u0131\u011f\u0131n\u0131 ayr\u0131nt\u0131l\u0131 olarak anlat\u0131r. \u0130yi bir ptisani<\/em>\u2019nin p\u00fcf noktas\u0131, m\u00fckemmel kalitede arpa tedarik edilmesiydi. Arpan\u0131n samanl\u0131 k\u0131s\u0131mlar\u0131ndan ar\u0131nd\u0131r\u0131lmas\u0131 i\u00e7in d\u00f6v\u00fclmesi ve \u00e7ok iyi kalitede suda kaynat\u0131lmas\u0131 gerekirdi. Daha sonra bir s\u00fcre \u0131slat\u0131lmal\u0131 ve m\u00fcmk\u00fcn oldu\u011funca fazla samandan kurtulmak i\u00e7in elle, tercihen sert bir nesneyle ovulmal\u0131yd\u0131. Ay\u0131klanm\u0131\u015f tohumlar daha sonra suda, \u00f6nce y\u00fcksek ate\u015fte kaynat\u0131lmal\u0131 yeterince \u015fi\u015ftikten sonra da koyu bir lapa haline gelene kadar pi\u015firilmeliydi.<\/p>\n\n\n\n

Antik metinlerde, t\u0131bbi konularla ilgili olanlar d\u0131\u015f\u0131nda, ptisani<\/em>‘den nadiren bahsedilir. Bazen Aristofanes (M.\u00f6. 5.-4. y\u00fczy\u0131l) gibi komedya \u015fairlerinin dizelerinde, Aleksis’in (M.\u00f6. 4.-3. Y\u00fczy\u0131l) yemek men\u00fcs\u00fcnde ve t\u0131bbi bir tarifi alaya al\u0131\u015f\u0131nda rastlan\u0131r. Menandros, Tahkimdeki Adamlar (M.\u00f6. 4.-3. y\u00fczy\u0131l) eserinde ptisani<\/em>\u2019nin, herkes i\u00e7in ucuz ve ortak bir yemek oldu\u011funu ifade ederken, hatip Demadis de (M.\u00f6. 4. y\u00fczy\u0131l) ya\u015fl\u0131lar i\u00e7in s\u0131radan bir yemek oldu\u011funu belirtir.<\/p>\n\n\n\n

Bir\u00e7ok \u00e7orba \u00e7e\u015fidi olsa da geleneksel Yunan mutfa\u011f\u0131, iki malzemeye dayanan bu tedavi edici ve \u00e7ok yayg\u0131n antik Yunan tarifinden yoksun g\u00f6r\u00fcn\u00fcyor. \u0130ri \u00f6\u011f\u00fct\u00fclm\u00fc\u015f bu\u011fday i\u00e7eren \u00e7orbalara g\u00fcn\u00fcm\u00fczde yerel mutfaklarda \u00e7e\u015fitli kombinasyonlarda rastlan\u0131r.<\/p>\n\n\n\n
