Mercimek evlerde kullan\u0131lmaya ve Neolitik d\u00f6nemin ilk tar\u0131m topluluklar\u0131 ortaya \u00e7\u0131kmadan \u00f6nce bile, yani yakla\u015f\u0131k 11 bin y\u0131l \u00f6nce Argolida&#8217;daki Franhti ma\u011faras\u0131nda ya\u015fayan yiyecek toplay\u0131c\u0131 gruplar\u0131n beslenme tarz\u0131n\u0131n bir bile\u015feniydi. Mercimek tohumlar\u0131, Yunanistan&#8217;daki M.\u00f6. 7. biny\u0131l\u0131n ba\u015flar\u0131na ait Neolitik k\u00f6ylerde yap\u0131lan kaz\u0131larda en s\u0131k rastlanan buluntular aras\u0131ndad\u0131r. \u00dclkenin arkeolojik buluntular\u0131nda mercime\u011fin varl\u0131\u011f\u0131, prehistorik \u00e7a\u011flar\u0131n son bin y\u0131l\u0131nda, Bronz \u00c7a\u011f\u0131&#8217;nda, M.\u00f6. 4. biny\u0131l\u0131n sonundan Bronz \u00c7a\u011f\u0131&#8217;n\u0131n sonuna kadar istikrarl\u0131 bir \u015fekilde devam eder. Tarih boyunca mercime\u011fin \u00e7e\u015fitleri ve pi\u015firme y\u00f6ntemleriyle ilgili etkileyici say\u0131da referansa sahibiz. Athenaeus\u2019un Deipnosophistae (Ak\u015fam Sofras\u0131 Filozoflar\u0131) adl\u0131 eserinde ifade edilen Fenias\u2019\u0131n bir metninden de belirtildi\u011fi \u00fczere <em>faki<\/em> (mercimek) ad\u0131 verilen mercimek \u00e7orbas\u0131 ya da antik \u00e7a\u011fda <em>fakinon etnos<\/em> ad\u0131 verilen kal\u0131n bir lapa olarak t\u00fcketilirdi. Antik komedya \u015fairi Aristofanes&#8217;in yazd\u0131\u011f\u0131na g\u00f6re, <em>etnos<\/em>\u2019u servis etmek i\u00e7in \u00f6zel bir kep\u00e7e bile vard\u0131. Antik Yunan&#8217;daki komedyalarda s\u0131k\u00e7a bahsi ge\u00e7en mercimek, g\u00fcndelik bir yiyecekti. \u015eair Solon&#8217;un M.\u00f6. 7.\/6. y\u00fczy\u0131la ait dizelerinde bahsetti\u011fi gibi, mercimek \u00e7orbas\u0131yla kar\u0131\u015ft\u0131r\u0131larak yenen \u00f6zel hamur i\u015flerine <em>guros<\/em> ad\u0131 verilirdi. Antik \u00e7a\u011f\u0131n mercimek bazl\u0131 yemekleri arpal\u0131 mercimek ve volvofaki\u2019ydi (so\u011fanl\u0131 mercimek). Bir papir\u00fcsten al\u0131nan al\u0131nt\u0131daysa <em>laganofaki<\/em> ad\u0131nda mercimek bazl\u0131 bir \u015fekerlemeden bahsedilir. Antik \u015fair Sopatros, M\u0131s\u0131r&#8217;\u0131n \u0130skenderiye kentinde \u00e7ok sevilen bir mercimek ekme\u011fi hakk\u0131nda yazm\u0131\u015ft\u0131r. Mercimek unu, baz\u0131 antik ekmeklerin bir bile\u015feni olmas\u0131n\u0131n yan\u0131 s\u0131ra, Hipokrat&#8217;\u0131n belirtti\u011fi gibi \u00e7e\u015fitli t\u0131bbi preparatlarda da kullan\u0131l\u0131rd\u0131.<\/p>\n\n\n\n<p>\u0130ster komedyalar ister t\u0131bbi metinler olsun, Antik Yunan metinlerinde mercime\u011fe kapsaml\u0131 bir \u015fekilde at\u0131fta bulunulmakta ve mercime\u011fin prehistorik d\u00f6nemden tarihi d\u00f6nemlere kadar Yunan mutfa\u011f\u0131n\u0131n bir malzemesi olarak etkileyici uzun \u00f6m\u00fcrl\u00fcl\u00fc\u011f\u00fc ortaya koyulmaktad\u0131r. Yunan mutfa\u011f\u0131n\u0131n bu de\u011ferli baklagili mercimek, g\u00fcn\u00fcm\u00fczde de h\u00e2l\u00e2 pek \u00e7ok Yunan evinde tercih edilmektedir. Antik Yunancadaki ad\u0131yla g\u00fcn\u00fcm\u00fcze kadar ula\u015fan <em>faki<\/em> (mercimek) \u00e7orbas\u0131, Yunan Ortodoks gelene\u011finde temel oru\u00e7 yemeklerinden birini olu\u015fturur.
