Bir s\u00fcre hafif ate\u015fte kaynat\u0131lm\u0131\u015f, g\u00fcne\u015fte iyice kurutulmu\u015f ve ard\u0131ndan kepe\u011fi temizlenip \u00f6\u011f\u00fct\u00fclm\u00fc\u015f saf bu\u011fday tanelerinden yap\u0131l\u0131r. Bu \u015fekilde saklanan bulgur, biraz \u0131slat\u0131larak ve \u00e7ok k\u0131sa s\u00fcre kaynat\u0131larak, tek ba\u015f\u0131na ya da di\u011fer malzemelerle birlikte kolayca, \u00e7ok besleyici ve sa\u011fl\u0131kl\u0131 bir yemek haline gelebilir. Yunanistan&#8217;daki 4000 y\u0131ll\u0131k en eski bulgur, arkeobotanik ara\u015ft\u0131rmalarla Kuzey Yunanistan&#8217;da, Selanik&#8217;ten \u00e7ok uzak olmayan iki k\u00f6y olan Mesimeriani Tumba ve Yanitsa Arhontiko&#8217;da tespit edilmi\u015ftir (Resim 1). Buralarda bir yang\u0131ndan \u00f6nce, kaynat\u0131lm\u0131\u015f ve \u00f6\u011f\u00fct\u00fclm\u00fc\u015f ve arkeolojik kaz\u0131 alan\u0131ndaki toprakta korunmu\u015f olan y\u00fczlerce bu\u011fday tanesi bulunmu\u015ftur.<\/p>\n\n\n\n<p>Antik d\u00f6nemde haz\u0131rlanan bulgurdan, Bizans \u0130mparatoru Konstantinos Porfirogennetos\u2019un emriyle derlenen, M.s. 10. y\u00fczy\u0131la ait Geoponika adl\u0131 eserde bahsedilmektedir. Ancak eserin antik d\u00f6neme ait bilgiler i\u00e7erdi\u011fi tahmin edilmektedir. Bu metinde \u2018hondru piisis\u2019 terimi, hondru olarak bilinen bulgurun haz\u0131rlanmas\u0131nda, g\u00fcn\u00fcm\u00fczde uygulananlara benzer ad\u0131mlar\u0131 tan\u0131mlamaktad\u0131r: farro bu\u011fday\u0131yla kapl\u0131 tanelerin kaynat\u0131lmas\u0131, al\u00e7\u0131 ve beyaz kumla birlikte d\u00f6v\u00fclmesi, ard\u0131ndan da \u00fc\u00e7 farkl\u0131 boyutta elenmesi gerekirdi. Bunlar\u0131n y\u0131l\u0131n en s\u0131cak g\u00fcnlerinde yap\u0131lmas\u0131na dikkat edilerek, kabu\u011fu \u00e7\u0131kar\u0131lm\u0131\u015f bu\u011fdaylar\u0131n ek\u015fimemesi sa\u011flan\u0131rd\u0131. Bu i\u015flemde bulgurun en kal\u0131n k\u0131sm\u0131n\u0131n en iyi k\u0131s\u0131m oldu\u011funun ve di\u011fer k\u0131s\u0131mlar\u0131n bunu takip etti\u011fi vurgulanmaktad\u0131r.<\/p>\n\n\n\n<p>Bu\u011fday tanesinin bulgur haline getirilmesi Yunanistan&#8217;da prehistorik \u00e7a\u011flardan beri bilinir. Sonras\u0131nda antik \u00e7a\u011flardan g\u00fcn\u00fcm\u00fcze kadar devam ederek, ayn\u0131 zamanda tarihi \u00e7ok eskiye dayanan bu tarifle temel bir g\u0131da maddesinin s\u00fcreklili\u011fi sa\u011flanm\u0131\u015ft\u0131r. Bulgur, Yunanistan&#8217;a \u00e7ok daha sonralar\u0131 gelen pirincin yerine bir\u00e7ok tarifte besin maddesi olarak yer al\u0131r. Hipokrat metinlerinde, \u00e7ok besleyici oldu\u011fu d\u00fc\u015f\u00fcn\u00fclen ancak kolay sindirilemeyen bulgurlu ekmekten bahseder.
