Men fr\u00e5n b\u00f6rjan anv\u00e4ndes olivolja troligen i religi\u00f6sa ceremonier och ritualer. Oliver har odlats i Grekland sedan f\u00f6rhistorisk tid: de tidigaste sp\u00e5ren av olivtr\u00e4d \u2013 pollen, tr\u00e4 och olivk\u00e4rnor \u2013 har sp\u00e5rats till \u00f6n Kreta f\u00f6r cirka 6&nbsp;000 \u00e5r sedan. Olivolja verkar ha varit h\u00f6gt skattad bland m\u00e4nniskorna i s\u00f6dra Grekland och Sydegeiska \u00f6arna under hela brons\u00e5ldern. Minoerna transporterade olivolja i s\u00e4rskilda lerk\u00e4rl, s\u00e5 kallade bygelkannor, och exporterade den \u00f6ver hela Medelhavet, en praxis som deras mykenska eftertr\u00e4dare antog och fortsatte. Flera \u00e5rhundraden av odling senare dokumenterades olivtr\u00e4d, i b\u00e5de vilda och domesticerade varianter, p\u00e5 Linear B-tavlor. Olivolja har ett eget dedikerat ideogram, f\u00f6rknippat med listor \u00f6ver varor som skickades till helgedomar f\u00f6r rituellt bruk. Olja som produceras fr\u00e5n vilda olivtr\u00e4d har ocks\u00e5 ett eget ideogram och anv\u00e4ndes i parfymtillverkning i mykenska palats.<br><br>I antikens Grekland fortsatte olivolja att anv\u00e4ndas i rituella sammanhang och f\u00f6rblev en dyr lyxvara. Som s\u00e5dan var den olivolja som tilldelades vinnarna av de panatheneiska spelen av stort kommersiellt v\u00e4rde. Denna olja utvanns fr\u00e5n oliver som v\u00e4xte p\u00e5 de heliga olivtr\u00e4den som skyddades av Morios Zeus. Dessa olivtr\u00e4d var k\u00e4nda som <em>moriai<\/em>, ett ord som man p\u00e5tr\u00e4ffar under 400-talet f.Kr. i Aristofanes och Lysias verk.<br><br>Vissa texter n\u00e4mner att olivolja anv\u00e4ndes f\u00f6r kulinariska \u00e4ndam\u00e5l under antiken. Bland referenserna finns Aristofanes pj\u00e4s <em>F\u00e5glarna<\/em> (300\u2013200 f.Kr.), d\u00e4r olivolja blandas med andra ingredienser och h\u00e4lls \u00f6ver en ugnsstekt f\u00e5gel som har serverats p\u00e5 matbordet. I ett annat fall f\u00f6resl\u00e5r Hippokrates att man behandlar en viss sjukdom genom att \u00e4ta kokt eller ugnsstekt fisk som ska kryddas med oregano och ringlas med olivolja. Archestratus (300-talet f.Kr.) beskriver n\u00e5got liknande, denna g\u00e5ng i ett kulinariskt sammanhang. Man tror att olivolja anv\u00e4ndes som stekolja i olika smetbaserade recept under antiken som fritters, vilket antyds av termen<em> zeselaiopages<\/em> som f\u00f6rekommer i poeten Filoxenos verk (400\u2013300-talet f.Kr.). Olivolja anv\u00e4ndes ocks\u00e5 f\u00f6r att konservera livsmedel. Ett anm\u00e4rkningsv\u00e4rt exempel \u00e4r fisk, genom <em>eleogaron<\/em>, ett begrepp som f\u00f6rekommer i det pseudo-hippokratiska verket <em>Om olika matr\u00e4tter<\/em>. I Hippokrates samlade verk finns m\u00e5nga h\u00e4nvisningar till olivolja som ingrediens i farmaceutiska formler och som en del av patienternas
