Baljv\u00e4xter, en prim\u00e4r proteink\u00e4lla i de f\u00f6rhistoriska samh\u00e4llena i Grekland liksom samh\u00e4llen under historisk tid, odlades i en m\u00e4ngd olika arter. Det framg\u00e5r b\u00e5de av de rester av f\u00f6rkolnade baljv\u00e4xtfr\u00f6n som hittats i tidigare bos\u00e4ttningar och av h\u00e4nvisningarna i antika grekiska texter. Under den sena brons\u00e5ldern saknas baljv\u00e4xter i Linear B-tavlorna, och det beror f\u00f6rmodligen p\u00e5 att man vid de mykenska palatsens centrala myndighet bara var intresserad av mycket specifika gr\u00f6dor som spannm\u00e5l, lin och fruktb\u00e4rande tr\u00e4d som fikontr\u00e4d, vinrankor och olivtr\u00e4d. Men \u00e4ven d\u00e5 odlade man olika baljv\u00e4xter, n\u00e5got som framg\u00e5r av f\u00f6rkolnade rester av baljv\u00e4xter som hittats i till exempel Knossos. Kanske kan den koppling som finns i antika grekiska texter mellan baljv\u00e4xter och vanliga vardagsm\u00e5ltider sp\u00e5ras tillbaka till de mykenska palatsens organisation av jordbruksproduktion och ekonomi, och till den tidens uppfattningar om vad som utgjorde en viktig jordbruksprodukt.<\/p>\n\n\n\n

De vanligaste s\u00e4tten att \u00e4ta baljv\u00e4xter var, enligt antika texter, i form av olika soppor eller som en tjock gr\u00f6t. Mer s\u00e4llan finner vi referenser till att man malde baljv\u00e4xter f\u00f6r att baka br\u00f6d eller rostade fr\u00f6na f\u00f6r att \u00e4ta dem som snacks \u2013 de antika grekernas tragimata<\/em>. Ibland \u00e5ts fr\u00f6na mjuka och s\u00f6ta innan de mognat, \u00e5terigen som tillbeh\u00f6r till vin \u2013 tragimata<\/em>.<\/p>\n\n\n\n

En s\u00e4rskilt intressant referens till hur baljv\u00e4xter konsumerades kommer fr\u00e5n Theofrastos (300- och 200-talet f.Kr.) i det botaniska verket De Causis Plantarum.<\/em> I boken skriver han att de sp\u00e4da skotten fr\u00e5n ochros<\/em>, en baljv\u00e4xt som troligen motsvarar dagens afkos<\/em> fr\u00e5n Lemnos (Lathyrus ochrus), \u00e5ts som mat. \u00c5rhundraden efter Theofrastos tid finns denna gamla kosth\u00e5llning fortfarande kvar p\u00e5 \u00f6n Kreta, d\u00e4r samma lathouri, Lathyrus ochrus, s\u00e5s i tr\u00e4dg\u00e5rdarna f\u00f6r att \u00e4tas som sallad. De sp\u00e4da skotten serveras vid bordet str\u00f6sslade med grovt salt tillsammans med ett glas raki. I dag kallas r\u00e4tten kamplies<\/em> eller papoules<\/em>. Kan det vara s\u00e5 att det kretensiska ordet kamplies<\/em> \u00e4r ett eko av det antika ordet kaulos<\/em>, termen f\u00f6r sp\u00e4da v\u00e4xtskott? Denna r\u00e4tt \u00e4r s\u00e5 omtyckt p\u00e5 Kreta att man f\u00f6r inte s\u00e5 l\u00e4nge sedan, n\u00e4r odlingen av afkos (Lathyrus ochrus) var utbredd p\u00e5 Lemnos, exporterade fr\u00f6na med fartyg fr\u00e5n Lemnos till Kreta. P\u00e5 s\u00e5 vis kunde kretensarna s\u00e5 dem och \u00e4ta lathouri som sallad \u2013 en enkel s\u00e4songsbetonad matr\u00e4tt med en m\u00e5nghundra\u00e5rig tradition och r\u00f6tter i antiken, om inte \u00e4nnu l\u00e4ngre tillbaka i tiden.<\/p>\n\n\n\n
