Det \u00e4r k\u00e4nt att de j\u00e4gare och samlare som levde i Franchthi-grottan i Argolis f\u00f6r cirka 11&nbsp;000 \u00e5r sedan, l\u00e5ngt innan de f\u00f6rsta neolitiska jordbrukssamh\u00e4llena uppstod, \u00e5t en vild linsvariant. Faktum \u00e4r att linsfr\u00f6n \u00e4r n\u00e5gra av de vanligaste arkeologiska fynden i neolitiska bos\u00e4ttningar i Grekland, daterade s\u00e5 tidigt som sjunde \u00e5rtusendet f.Kr. De \u00e4r vanligt f\u00f6rekommande bland arkeologiska fynd i hela Grekland under de sista \u00e5rtusendena av den f\u00f6rhistoriska eran, fr\u00e5n slutet av fj\u00e4rde \u00e5rtusendet f.Kr. till slutet av brons\u00e5ldern. Under historisk tid har vi ett anm\u00e4rkningsv\u00e4rt antal referenser till linser, deras sorter och s\u00e4tt att tillaga dem. Enligt filosofen Phaenias, som \u00e5terges av Athenaios i verket <em>Deipnosophistae<\/em>, kunde linser tillagas antingen som en soppa \u2013 k\u00e4nd som <em>faki<\/em> \u2013 eller som en tjock gr\u00f6t som de gamla grekerna kallade <em>etnos<\/em>, s\u00e4rskilt <em>fakinon etnos<\/em>. Enligt den komiske poeten Aristofanes anv\u00e4nde de till och med en s\u00e4rskild slev f\u00f6r att servera <em>etnos<\/em>. Linser n\u00e4mndes ofta i antika komedier och verkar ha varit en basf\u00f6da i den antika grekiska kosten. Enligt poeten Solon (640\u2013560 f.Kr), \u00e5t man ofta linssoppa tillsammans med en speciell bakelse som kallades <em>gouros<\/em>. Tv\u00e5 linsbaserade r\u00e4tter fr\u00e5n antiken \u00e4r <em>fakoptisani<\/em> och <em>volvofaki<\/em>. Det finns till och med en h\u00e4nvisning till en linsbaserad konfekt, <em>laganofaki<\/em>, i en passage fr\u00e5n en papyrusrulle. Den antika poeten Sopater n\u00e4mner ett br\u00f6d gjort p\u00e5 linser som var s\u00e4rskilt popul\u00e4rt i Alexandria i Egypten. Ut\u00f6ver att linsmj\u00f6l anv\u00e4ndes som ingrediens i antika br\u00f6d hade det ocks\u00e5 farmaceutiska anv\u00e4ndningsomr\u00e5den, liksom linser i allm\u00e4nhet. Faktum \u00e4r att Hippokrates n\u00e4mner m\u00e5nga farmaceutiska formuleringar med linsmj\u00f6l som en ingrediens.<\/p>\n\n\n\n<p>Antika grekiska litter\u00e4ra k\u00e4llor, b\u00e5de komedier och medicinska texter, inneh\u00e5ller omfattande referenser till linser, vilket visar p\u00e5 linsens imponerande livsl\u00e4ngd som basf\u00f6da i Grekland fr\u00e5n f\u00f6rhistorisk tid \u00e4nda fram till den historiska perioden. Denna f\u00f6rk\u00e4rlek f\u00f6r linser i matkulturen fr\u00e5n Grekland \u00e4r fortfarande tydlig i moderna grekiska hem. Soppan har kvar sitt gamla namn <em>faki<\/em> och \u00e4r en popul\u00e4r r\u00e4tt som serveras under fasteperioder enligt den grekisk-ortodoxa traditionen.
