Un autre lien indissociable unit ces \u00eeles \u00e0 Corfou, puisqu\u2019elles sont situ\u00e9es tout pr\u00e8s de ses c\u00f4tes m\u00e9ridionales. Selon la mythologie, Pos\u00e9idon aurait d\u00e9tach\u00e9 cette partie m\u00e9ridionale de Corfou \u00e0 l\u2019aide de son trident, donnant ainsi naissance \u00e0 Paxos, qui devait abriter ses amours avec la d\u00e9esse Amphitrite. Il perdit toutefois son trident, que les habitants de Paxos ont depuis adopt\u00e9 comme symbole. La capitale de l\u2019\u00eele est Gaios, un magnifique village pittoresque qui t\u00e9moigne de l\u2019influence v\u00e9nitienne, tant dans son architecture que dans son atmosph\u00e8re. Maisons color\u00e9es aux teintes de terre cuite, toits de tuiles, ruelles \u00e9troites, espaces verts et un charmant petit port composent un v\u00e9ritable d\u00e9cor de carte postale. Ne manquez pas de visiter l\u2019\u00eelot inhabit\u00e9 d\u2019Agios Nikolaos, o\u00f9 se dresse le plus important monument de Paxos&nbsp;: les remparts de la forteresse v\u00e9nitienne, admirablement bien conserv\u00e9s depuis le XV<sup>e<\/sup> si\u00e8cle. En dehors de la capitale, l\u2019\u00eele compte trois autres villages&nbsp;: Lakka, entour\u00e9 d\u2019innombrables oliviers, Logos, r\u00e9put\u00e9 pour ses tavernes de p\u00eacheurs, et Magazia. Les plages de Paxos figurent parmi les plus belles au monde. Leurs eaux turquoise cristallines, leurs rivages de sable ou de galets d\u2019un blanc \u00e9clatant, bord\u00e9s de verdure, offrent au visiteur un tableau fascinant. La plus grande plage de l\u2019\u00eele est Kipiadi, et il ne faut pas manquer de faire l\u2019excursion vers les plages d\u2019Antipaxos, Voutoumi et Vrika.<\/p>\n\n\n\n<p><strong>Gastronomie <\/strong><strong><\/strong><\/p>\n\n\n\n<p>Fortement influenc\u00e9e par les V\u00e9nitiens, la culture gastronomique de Paxos se distingue par une grande vari\u00e9t\u00e9 de plats et de produits locaux qui la rendent particuli\u00e8rement int\u00e9ressante. L\u2019huile d\u2019olive y occupe une place centrale, les oliviers plant\u00e9s sous la domination v\u00e9nitienne constituant encore aujourd\u2019hui une ressource essentielle de l\u2019\u00eele. L\u2019huile d\u2019olive locale, \u00e0 la saveur unique, est la base de toutes les recettes. L\u2019\u00eele d\u2019Antipaxos abrite \u00e9galement des vignobles, dont est issu un vin rouge puissant que vous aurez certainement l\u2019occasion de d\u00e9guster dans une taverne ou un restaurant. Le vin, tout comme la tyrovolia \u2013 un fromage frais local \u2013, est encore aujourd\u2019hui un produit exclusivement \u00ab&nbsp;maison&nbsp;\u00bb.<\/p>\n\n\n\n<p>La recette la plus embl\u00e9matique de Paxos est la <em>tsiligourdopita<\/em>, une tourte unique farcie de foie d\u2019agneau et de riz. Autre sp\u00e9cialit\u00e9 locale, le <em>patelorizo<\/em>, un riz pilaf aux patelles, tandis que des plats tels que le coq <em>pastitsada<\/em>, le <em>bourdeto<\/em> et le <em>sofrito<\/em> t\u00e9moignent de la profonde influence culturelle de l\u2019\u00eele voisine de Corfou.
