Moins de couleurs, des saveurs plus profondes, un besoin plus important d&rsquo;\u00e9quilibre. La salade d&rsquo;hiver n&rsquo;est pas un accompagnement, c&rsquo;est un repas l\u00e9ger \u00e0 d\u00e9guster \u00e0 toute heure de la journ\u00e9e, qui se suffit \u00e0 elle-m\u00eame sans \u00eatre lourd. Quelque chose que l&rsquo;on mange avant ou apr\u00e8s une r\u00e9p\u00e9tition ou un spectacle, entre deux obligations, ou tard le soir, quand on n&rsquo;a pas tr\u00e8s faim, mais qu&rsquo;on a envie de quelque chose de vrai.<\/p>\n\n\n\n<p>Le chou rouge a de l&rsquo;intensit\u00e9, du caract\u00e8re, presque du th\u00e9\u00e2tral. Si on le travaille correctement, il ramollit, se transforme et devient la base d&rsquo;une salade qui change facilement d&rsquo;humeur, selon ce qu\u2019on y ajoute.<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><a><\/a>Salade d&rsquo;hiver au chou rouge, yaourt (et variantes l\u00e9g\u00e8res)<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><a><\/a>Ingr\u00e9dients (pour 4 portions)<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 petit chou rouge (environ 500 g)<\/li>\n\n\n\n<li>1 grosse carotte<\/li>\n\n\n\n<li>1 petit oignon<\/li>\n\n\n\n<li>2 cuill\u00e8res \u00e0 soupe de feuilles de c\u00e9leri, finement hach\u00e9es<\/li>\n\n\n\n<li>200 g de yaourt grec<\/li>\n\n\n\n<li>2 cuill\u00e8res \u00e0 soupe de vinaigre de cidre ou de vinaigre blanc<\/li>\n<\/ul>\n\n\n\n<p>Pour les variantes (facultatif) :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 pomme verte, r\u00e2p\u00e9e grossi\u00e8rement ou coup\u00e9e en tranches tr\u00e8s fines<\/li>\n\n\n\n<li>40 g de noix ou d&rsquo;amandes, l\u00e9g\u00e8rement grill\u00e9es et hach\u00e9es grossi\u00e8rement<\/li>\n\n\n\n<li>\u00bd cuill\u00e8re \u00e0 caf\u00e9 de cumin (entier ou l\u00e9g\u00e8rement moulu)<\/li>\n<\/ul>\n\n\n\n\n\n<h3 class=\"wp-block-heading\"><a><\/a>Pr\u00e9paration<\/h3>\n\n\n\n<p>Coupez le chou rouge aussi finement que possible et mettez-le dans un grand saladier. Frottez-le doucement avec vos mains pendant 1 \u00e0 2 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;il ramollisse et r\u00e9duise de volume. Cette \u00e9tape est cruciale : le chou doit \u00ab s&rsquo;ouvrir \u00bb pour devenir tendre.<\/p>\n\n\n\n<p>Ajoutez la carotte r\u00e2p\u00e9e, l&rsquo;oignon et les feuilles de c\u00e9leri finement hach\u00e9es. Pour plus de fra\u00eecheur et une douceur discr\u00e8te, ajoutez la pomme verte.<\/p>\n\n\n\n<p>Dans un petit bol, m\u00e9langez le yaourt grec avec le vinaigre de pomme ou le vinaigre blanc jusqu&rsquo;\u00e0 obtenir une cr\u00e8me lisse et l\u00e9g\u00e8re. Si vous aimez les ar\u00f4mes chauds, ajoutez une demi-cuill\u00e8re \u00e0 caf\u00e9 de cumin, avec parcimonie, afin qu&rsquo;il apporte du go\u00fbt sans dominer.<\/p>\n\n\n\n<p>Versez le m\u00e9lange de yaourt sur la salade et m\u00e9langez bien. Enfin, ajoutez les fruits secs pour apporter de la texture et de l&rsquo;\u00e9quilibre.<\/p>\n\n\n\n<p>Servez dans un saladier en verre.
