Valamoti, juillet&nbsp;2025.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><em>Soultana-Maria Valamoti, Professor, School of History and Archaeology, Aristotle University of Thessaloniki<\/em><\/strong><strong><em><\/em><\/strong><\/p>\n\n\n\n<p>Le trahanas d\u00e9signe \u00e0 la fois un ingr\u00e9dient et une pr\u00e9paration, avec de nombreuses variantes, dot\u00e9 d\u2019excellentes propri\u00e9t\u00e9s nutritionnelles, et en m\u00eame temps mall\u00e9able, capable de se transformer en une multitude de recettes savoureuses. Tout aussi impressionnante est son anciennet\u00e9, qui pourrait se perdre dans les profondeurs de la pr\u00e9histoire \u2013 au moins aussi ancienne que la maison de l\u2019\u00e2ge du Bronze mise au jour \u00e0 Mesimeriani Toumba, dans le village de Trilofo, non loin de Thessalonique, qui fut d\u00e9truite par un incendie vers la fin du III<sup>e<\/sup> mill\u00e9naire av. J.-C. L\u00e0, dans un r\u00e9cipient en terre cuite, ont \u00e9t\u00e9 trouv\u00e9s des fragments carbonis\u00e9s de bl\u00e9 ayant subi un traitement thermique dans un liquide qui pourrait avoir \u00e9t\u00e9 du lait ou du lait aigre, un ingr\u00e9dient de base du trahanas. Le trahanas de bl\u00e9 tel que nous le connaissons aujourd\u2019hui en Gr\u00e8ce est une combinaison d\u2019un produit laitier \u2013 sous forme de lait ou de lait aigre \u2013 et de c\u00e9r\u00e9ales moulues, principalement du bl\u00e9, soit non pr\u00e9cuit, comme dans le <em>korkoto<\/em> de la r\u00e9gion du Pont et le <em>chondros<\/em> de Cr\u00e8te, soit sous forme de boulgour, c\u2019est-\u00e0-dire du bl\u00e9 pr\u00e9cuit puis concass\u00e9. Ces deux ingr\u00e9dients, apr\u00e8s avoir bouilli ensemble avec l\u2019ajout n\u00e9cessaire de sel qui agit comme agent de conservation, sont \u00e9tal\u00e9s sous le soleil br\u00fblant de l\u2019\u00e9t\u00e9 afin de s\u00e9cher compl\u00e8tement et de pouvoir se conserver longtemps.<\/p>\n\n\n\n<p>La combinaison c\u00e9r\u00e9ale-produit laitier est connue dans les textes grecs anciens sous diverses formes. La <em>maza<\/em> <em>amolga\u00ef<\/em> renvoie \u00e0 une pr\u00e9paration \u00e0 base d\u2019orge moulue et de lait, que l\u2019on rencontre dans l\u2019ouvrage d\u2019H\u00e9siode <em>Les Travaux et les Jours<\/em> (VIII<sup>e<\/sup>\u2013VII<sup>e<\/sup> si\u00e8cle av. J.-C.). Le <em>chondros<\/em>, bl\u00e9 concass\u00e9, appara\u00eet quant \u00e0 lui dans une recette o\u00f9 il est mis \u00e0 tremper avec du lait, selon un fragment d\u2019une \u0153uvre de Ph\u00e9r\u00e9crate (V<sup>e<\/sup> si\u00e8cle av. J.-C.). H\u00e9cat\u00e9e d\u2019Abd\u00e8re (IV<sup>e<\/sup>\u2013III<sup>e<\/sup> si\u00e8cle av. J.-C.) rapporte \u00e9galement que les pr\u00eatres d\u2019\u00c9gypte consommaient du <em>chondros<\/em> cuit dans du lait. Cependant, dans ces quelques r\u00e9f\u00e9rences antiques o\u00f9 du bl\u00e9 concass\u00e9 ou de l\u2019orge moulue sont m\u00e9lang\u00e9s, bouillis ou p\u00e9tris avec du lait, il ne ressort pas clairement une pr\u00e9paration \u00e9quivalente au trahanas de bl\u00e9 tel que nous le connaissons aujourd\u2019hui.<\/p>\n\n\n\n<p>Le trahanas de bl\u00e9 en Gr\u00e8ce constitue un aliment complet combinant un ingr\u00e9dient riche en amidon (le bl\u00e9) et un ingr\u00e9dient riche en prot\u00e9ines (le lait ou le lait aigre). Ces \u00e9l\u00e9ments se transforment tr\u00e8s facilement, rapidement, avec tr\u00e8s peu de cuisson \u2013 et donc tr\u00e8s peu de combustible \u2013 en un repas complet. On le rencontre sous diff\u00e9rentes formes, en masses \u00e9paisses et irr\u00e9guli\u00e8res, comme le <em>xinochondros<\/em> cr\u00e9tois, ou sous forme de petites \u00ab&nbsp;barquettes&nbsp;\u00bb comme les <em>chachles<\/em> de Lesbos. De plus, ce plat peut \u00eatre consomm\u00e9 sans difficult\u00e9 par de jeunes enfants et des personnes \u00e2g\u00e9es \u00e9dent\u00e9es.
