{"id":14231,"date":"2025-07-23T15:09:01","date_gmt":"2025-07-23T15:09:01","guid":{"rendered":"https:\/\/portal.greekfarms.gov.gr\/?p=14231"},"modified":"2025-12-22T20:18:34","modified_gmt":"2025-12-22T20:18:34","slug":"beignets","status":"publish","type":"post","link":"https:\/\/portal.greekfarms.gov.gr\/fr\/beignets\/","title":{"rendered":"Beignets"},"content":{"rendered":"\n<p><strong><em>Soulta Maria Valamoti,  <strong><em>Professor, School of History and Archaeology, Aristotle University of Thessaloniki<\/em><\/strong><\/em><\/strong><\/p>\n\n\n\n<p>La po\u00eale, un ustensile que nous connaissons tr\u00e8s bien aujourd&rsquo;hui dans la cuisine grecque comme dans d&rsquo;autres cuisines, \u00e9tait non seulement connue dans la Gr\u00e8ce antique et appr\u00e9ci\u00e9e pour certaines recettes, mais elle portait \u00e9galement le m\u00eame nom que l&rsquo;ustensile actuel, \u00e0 savoir <em>tiganon<\/em> (po\u00eale, en grec). Souvent mentionn\u00e9e comme accessoire servant \u00e0 faire frire de petits poissons, elle \u00e9tait \u00e9galement utilis\u00e9e pour d&rsquo;autres pr\u00e9parations telles que les beignets. L&rsquo;id\u00e9e de cuire une p\u00e2te dans de l&rsquo;huile chaude existe au moins depuis la Gr\u00e8ce antique et pourrait \u00eatre beaucoup plus ancienne, car des r\u00e9cipients en c\u00e9ramique peu profonds et ouverts ont \u00e9t\u00e9 trouv\u00e9s dans des sites pr\u00e9historiques d\u00e8s le N\u00e9olithique en Gr\u00e8ce.<\/p>\n\n\n\n<p>La culture des c\u00e9r\u00e9ales est une pratique ancestrale en Gr\u00e8ce, avec une grande vari\u00e9t\u00e9 de bl\u00e9 et d&rsquo;orge cultiv\u00e9s d\u00e8s le 7e mill\u00e9naire avant J.-C. Ces deux esp\u00e8ces constituaient les principaux aliments des habitants de la Gr\u00e8ce, qui, d\u00e8s la pr\u00e9histoire, les ont transform\u00e9s en une impressionnante vari\u00e9t\u00e9 de recettes en m\u00e9langeant les graines moulues sous forme de farine avec divers ingr\u00e9dients tels que l&rsquo;eau, le lait, le vin et le miel. Les p\u00e2tes anciennes pouvaient \u00eatre cuites de diff\u00e9rentes mani\u00e8res et transform\u00e9es en pains, en galettes, mais aussi en une cat\u00e9gorie particuli\u00e8re de recettes qui n\u00e9cessitaient la cuisson de la p\u00e2te dans de l&rsquo;huile bouillante. Il s&rsquo;agit donc de recettes de beignets de diff\u00e9rentes formes.<\/p>\n\n\n\n<p>Le mot ancien <em>tiganitis<\/em> appara\u00eet d\u00e8s le VIe si\u00e8cle avant J.-C. dans l&rsquo;\u0153uvre du po\u00e8te Hipponax, puis plus tard dans la com\u00e9die antique. Il est m\u00eame fait mention dans la com\u00e9die antique de beignets au s\u00e9same, qui rappellent les xerotigana (beignets croustillants au miel) cr\u00e9tois. Le mot <em>tiganitis<\/em> d\u00e9signe une p\u00e2te frite \u00e0 la po\u00eale avec de l&rsquo;huile ou une autre forme de graisse. Galien d\u00e9crit d&rsquo;ailleurs dans son ouvrage comment les pr\u00e9parer. Selon ce grand m\u00e9decin de l&rsquo;Antiquit\u00e9, pour pr\u00e9parer les beignets, il fallait placer la po\u00eale sur un feu qui ne d\u00e9gageait pas de fum\u00e9e, y verser de l&rsquo;huile et, une fois celle-ci chaude, y verser la p\u00e2te. D&rsquo;apr\u00e8s cette description, on comprend que cette p\u00e2te \u00e9tait assez liquide, car Galien la d\u00e9crit comme un m\u00e9lange de farine de bl\u00e9 et de beaucoup d&rsquo;eau. Il est m\u00eame mentionn\u00e9 que lorsque cette p\u00e2te est cuite dans l&rsquo;huile, elle change rapidement de consistance et ressemble \u00e0 du fromage mou qui caille dans des paniers. \u00c0 ce stade, Galien dit qu&rsquo;il faut retourner le beignet pour que le dessous cuise, et r\u00e9p\u00e9ter cette op\u00e9ration deux ou trois fois jusqu&rsquo;\u00e0 ce que le beignet soit
