La cuisine locale fait partie int\u00e9grante de l’exp\u00e9rience touristique. La plupart des touristes veulent go\u00fbter les sp\u00e9cialit\u00e9s de chaque pays qu’ils visitent. C’est pourquoi nous devons leur offrir ce que la terre grecque a de mieux \u00e0 offrir.<\/p>\n\n\n\n

Laissons derri\u00e8re nous les tendances \u00e9ph\u00e9m\u00e8res et les influences \u00e9trang\u00e8res. Nous avons des saveurs fortes et authentiques qui mettent en valeur la richesse de notre tradition. Nous n’avons pas besoin d’importer des produits simplement parce qu’ils sont consid\u00e9r\u00e9s comme \u00ab \u00e0 la mode \u00bb. Notre v\u00e9ritable force r\u00e9side dans le caract\u00e8re unique de la cuisine grecque, dans nos racines, dans ce qui nous distingue de toute autre culture gastronomique.<\/strong><\/p>\n\n\n\n

Nous devons tourner notre regard vers ce que produit la terre grecque. Il est inutile d’importer des tendances alimentaires : ce qu’il faut, c’est exporter les n\u00f4tres. La pr\u00e9servation de la tradition est indissociable de la vie agricole. Aujourd’hui, les agriculteurs sont confront\u00e9s \u00e0 des difficult\u00e9s et abandonnent leurs terres. Et lorsque la production locale dispara\u00eet, nous ne trouvons bient\u00f4t plus de produits grecs, ou alors \u00e0 des prix exorbitants et de qualit\u00e9 inf\u00e9rieure.<\/p>\n\n\n\n

Les produits import\u00e9s, outre le fait qu’ils nuisent \u00e0 l’environnement, perdent leur fra\u00eecheur et leur saveur au cours du transport. En revanche, gr\u00e2ce au climat unique de notre pays, les produits grecs sont incomparables en termes de qualit\u00e9 et de saveur. Par exemple, le sous-sol des mers grecques est rocheux, ce qui rend le poisson d\u00e9licieux. Il en va de m\u00eame pour notre \u00e9levage : le porc, l’agneau, le chevreau et le poulet grecs sont d’une qualit\u00e9 exceptionnelle. Il est important que les cuisiniers soutiennent les producteurs grecs, m\u00eame si leurs produits sont un peu plus chers que ceux import\u00e9s. Car cet argent reviendra dans le pays.<\/p>\n\n\n\n

Il existe bien \u00e9videmment des chefs qui s’efforcent de mettre en valeur la cuisine locale authentique. Mais le d\u00e9fi consiste \u00e0 pr\u00e9server nos racines. Car ce sont elles qui font notre particularit\u00e9. Le visiteur doit avoir l’impression d’avoir mang\u00e9 en Gr\u00e8ce et repartir avec les saveurs et les parfums de notre pays grav\u00e9s dans sa m\u00e9moire.<\/p>\n\n\n\n

Avant de parler d’exportation, nous devons d’abord conna\u00eetre nos produits, les appr\u00e9cier et les int\u00e9grer dans notre quotidien. Le tourisme est en plein essor, et avec lui, le besoin de restaurants, de cuisiniers, de main-d’\u0153uvre \u2013 et donc de renforcement de la production.<\/p>\n\n\n\n

Imaginez ce que serait la Gr\u00e8ce si toutes les entreprises n’utilisaient que des produits locaux. L’\u00e9conomie locale serait renforc\u00e9e, les petits producteurs prosp\u00e9reraient et l’authenticit\u00e9 de la cuisine grecque deviendrait notre marque de fabrique. Les coop\u00e9ratives, les femmes des villages, les boulangeries traditionnelles peuvent jouer un r\u00f4le d\u00e9terminant dans cet effort.<\/p>\n\n\n\n

Il est impensable, par exemple, d’\u00eatre dans une montagne en Cr\u00e8te et de ne pas servir de fromages locaux provenant des bergers de la r\u00e9gion. Nous devons pers\u00e9v\u00e9rer, communiquer sans cesse, inspirer les autres. Le r\u00f4le du cuisinier n’est pas seulement de cr\u00e9er, il est aussi d\u2019\u00e9duquer. C’est lui qui fera d\u00e9couvrir les produits locaux au monde entier, qui les mettra en valeur, qui en fera les protagonistes de l’exp\u00e9rience.<\/p>\n\n\n\n
