Le raisin est pr\u00e9sent en Gr\u00e8ce depuis au moins 9 000 ans et il est certain que d\u00e8s la fin du 5e mill\u00e9naire avant J.-C., les habitants du nord de la Gr\u00e8ce pressaient les raisins pour en extraire le jus, une pratique qui s&rsquo;est g\u00e9n\u00e9ralis\u00e9e par la suite, comme le montrent les vestiges arch\u00e9obotaniques de raisins carbonis\u00e9s et les textes anciens. Outre le vin, le jus de raisin pouvait \u00eatre transform\u00e9 en un sirop sucr\u00e9 apr\u00e8s un traitement appropri\u00e9.<br>Ainsi, Galien, dans son ouvrage R\u00e9gime amaigrissant, fait r\u00e9f\u00e9rence au siraion, une pr\u00e9paration \u00e0 base de mo\u00fbt tr\u00e8s bien bouilli. Ce liquide sucr\u00e9 semble correspondre \u00e0 un autre mot ancien, \u00ab epsima \u00bb, que l&rsquo;on retrouve par exemple dans l&rsquo;ouvrage d&rsquo;Hippocrate intitul\u00e9 \u00ab Du r\u00e9gime \u00bb. L&rsquo;utilisation du jus de raisin concentr\u00e9 apr\u00e8s \u00e9bullition avait de nombreuses applications m\u00e9dicinales, car il est souvent mentionn\u00e9 comme ingr\u00e9dient de pr\u00e9parations th\u00e9rapeutiques \u00e0 usage externe ou interne dans l&rsquo;ouvrage d&rsquo;Aetios d&rsquo;Amida, un m\u00e9decin c\u00e9l\u00e8bre de la fin de l&rsquo;Antiquit\u00e9. Le siraion est mentionn\u00e9 dans des extraits des po\u00e8tes comiques Alexis et Antiphane, dans Les Gu\u00eapes d&rsquo;Aristophane ainsi que dans l&rsquo;ouvrage d&rsquo;Hippocrate Sur les maladies f\u00e9minines. Outre les textes grecs anciens, le sirop de raisin est \u00e9galement mentionn\u00e9 dans les textes des auteurs latins sous les termes defrutum et sapa, qui d\u00e9signent un liquide obtenu par \u00e9bullition du mo\u00fbt. On trouve m\u00eame des recettes o\u00f9 le mo\u00fbt sert de conservateur pour d&rsquo;autres fruits tels que les coings, les grenades et les sureaux, les fruits \u00e9tant bouillis pendant longtemps dans le mo\u00fbt de raisin jusqu&rsquo;\u00e0 ce qu&rsquo;ils se dissolvent, comme le montre l&rsquo;\u0153uvre de Scribonius Largus, m\u00e9decin de l&#8217;empereur Claude. Le sirop de raisin ou epsima des Anciens \u00e9tait un \u00e9dulcorant pr\u00e9cieux, mais aussi un ingr\u00e9dient important dans les recettes m\u00e9dicinales, non seulement dans l&rsquo;Antiquit\u00e9, mais aussi \u00e0 des \u00e9poques plus r\u00e9centes, survivant jusqu&rsquo;\u00e0 aujourd&rsquo;hui dans des recettes traditionnelles tant culinaires que m\u00e9dicinales. Les utilisations du mo\u00fbt sucr\u00e9 bouilli sous forme de sirop comme \u00e9dulcorant mais aussi comme ingr\u00e9dient m\u00e9dicinal sont encore courantes de nos jours. On le trouve aujourd&rsquo;hui comme base pour la pr\u00e9paration de recettes, de desserts \u00e0 la cuill\u00e8re o\u00f9, traditionnellement, les fruits sont cuits dans le sirop de raisin, ce qui permet de les conserver. De plus, le sirop de raisin continue d&rsquo;\u00eatre utilis\u00e9 dans des recettes m\u00e9dicinales traditionnelles, car il est consid\u00e9r\u00e9 comme un rem\u00e8de contre les douleurs menstruelles et les probl\u00e8mes respiratoires.
