Kreikan esihistoriallisten ja historiallisten yhteiskuntien ensisijaisena proteiininl\u00e4hteen\u00e4 k\u00e4ytettyj\u00e4 palkokasveja viljeltiin monia eri lajeja. T\u00e4m\u00e4 k\u00e4y ilmi sek\u00e4 muinaisilta asutusalueilta l\u00f6ytyneiden hiiltyneiden palkokasvien siementen j\u00e4\u00e4nteist\u00e4 ett\u00e4 antiikin kreikkalaisten tekstien viittauksista. My\u00f6h\u00e4isen pronssikauden aikaisissa, lineaari-B-kirjoituksella tehdyiss\u00e4 savitauluissa palkokasveja ei mainita. T\u00e4m\u00e4 johtuu todenn\u00e4k\u00f6isesti siit\u00e4, ett\u00e4 mykenel\u00e4iset palatsit olivat kiinnostuneita vain hyvin erityisist\u00e4 viljelykasveista, kuten viljoista, pellavasta ja hedelm\u00e4puista, kuten viikuna-, ryp\u00e4le- ja oliivipuista. Silloinkin erilaisia palkokasveja kuitenkin viljeltiin, mink\u00e4 osoittavat esimerkiksi Knossokselta l\u00f6ytyneet hiiltyneet palkokasvien j\u00e4\u00e4nteet. Ehk\u00e4p\u00e4 muinaisissa kreikkalaisissa kirjoituksissa esiintynyt palkokasvien yhdist\u00e4minen tavallisten ihmisten jokap\u00e4iv\u00e4isiin aterioihin voidaan liitt\u00e4\u00e4 maataloustuotannon organisointiin ja mykenel\u00e4isten palatsien talouteen sek\u00e4 kyseisen ajan k\u00e4sityksiin siit\u00e4, mitk\u00e4 olivat t\u00e4rkeit\u00e4 maataloustuotteita.<\/p>\n\n\n\n

Yleisimm\u00e4t tavat nauttia palkokasveja olivat keitot tai paksut puurot, kuten muinaisista kirjoituksista k\u00e4y ilmi. Kirjoituksissa on my\u00f6s jonkin verran viittauksia palkokasvien jauhamiseen leiv\u00e4n valmistamista varten tai siementen paahtamiseen v\u00e4lipalaksi, josta muinaiset kreikkalaiset k\u00e4yttiv\u00e4t nimityst\u00e4 tragimata<\/em>. Erityisen mielenkiintoisen viittauksen palkokasvien k\u00e4ytt\u00f6\u00f6n on tehnyt Theofrastos, joka eli 300\u2013200-luvuilla eKr., teoksessaan Kasveja koskevia syit\u00e4<\/em>. T\u00e4ss\u00e4 teoksessa h\u00e4n kirjoittaa, ett\u00e4 ochroksen<\/em> pehmeit\u00e4 palkoja sy\u00f6tiin ruokana. T\u00e4m\u00e4 palkokasvi vastaa todenn\u00e4k\u00f6isesti nykyp\u00e4iv\u00e4n limnoslaista afkosta<\/em> (Lathyrus ochrus, kyproksenn\u00e4tkelm\u00e4). Vuosisatoja Theofrastoksen ajan j\u00e4lkeen t\u00e4t\u00e4 muinaista ruokailutapaa noudatetaan edelleen Kreetan saarella, jossa t\u00e4t\u00e4 samaa kyproksenn\u00e4tkelm\u00e4\u00e4, Lathyrus ochrusta, kylvet\u00e4\u00e4n puutarhoihin ja sy\u00f6d\u00e4\u00e4n salaattina.
