Refreshing and authentic, this combination of Greek salad (horiatiki) and tzatziki offers a truly unique flavour.<\/p>\n\n\n\n

-Ingredients:<\/p>\n\n\n\n

200 g medium orzo, boiled<\/p>\n\n\n\n

100 g feta cheese, crumbled<\/p>\n\n\n\n

1 cucumber, finely chopped<\/p>\n\n\n\n

1 tomato, finely chopped<\/p>\n\n\n\n

50 g Kalamata olives<\/p>\n\n\n\n

1 green bell pepper, finely chopped<\/p>\n\n\n\n

1 onion, finely chopped<\/p>\n\n\n\n

\u00bd bunch parsley, finely chopped<\/p>\n\n\n\n

Olive Oil<\/p>\n\n\n\n

Salt<\/p>\n\n\n\n

Pepper<\/p>\n\n\n\n

*optionally, a few carob rusks<\/p>\n\n\n\n

-For the tzatziki sauce:<\/p>\n\n\n\n

120 g strained yogurt<\/p>\n\n\n\n

3 garlic cloves, crushed<\/p>\n\n\n\n

1 tablespoon vinegar<\/p>\n\n\n\n

2 tablespoons finely chopped dill<\/p>\n\n\n\n

Salt<\/p>\n\n\n\n

Pepper<\/p>\n\n\n\n

-Preparation:<\/p>\n\n\n\n

Boil the orzo according to the instructions on the packet. Strain, let cool, and drizzle with some oil to create a slight glaze. In a salad bowl, toss together all the ingredients. In a smaller bowl, add the ingredients for the tzatziki sauce.
