{"id":20141,"date":"2026-02-05T16:53:47","date_gmt":"2026-02-05T16:53:47","guid":{"rendered":"https:\/\/portal.greekfarms.gov.gr\/?p=20141"},"modified":"2026-02-06T08:27:24","modified_gmt":"2026-02-06T08:27:24","slug":"focaccia-von-vasiliki-troufakou","status":"publish","type":"post","link":"https:\/\/portal.greekfarms.gov.gr\/de\/focaccia-von-vasiliki-troufakou\/","title":{"rendered":"Focaccia von Vasiliki Troufakou"},"content":{"rendered":"\n<p><em>Eine mediterrane K\u00f6stlichkeit f\u00fcr jeden Geschmack<\/em><\/p>\n\n\n\n<p>ZUTATEN F\u00dcR FOCACCIA<\/p>\n\n\n\n<p>400&nbsp;g Mehl<br>300&nbsp;ml Wasser (stets auf die Konsistenz des Teigs achten)<br>5&nbsp;g Hefe<br>1&nbsp;Teel\u00f6ffel Honig<br>1&nbsp;Teel\u00f6ffel Salz<br>Reichlich \u00d6l (nach Belieben)<br>Rosmarin, Salzbl\u00fcten, Pfeffer, K\u00e4se, Chiliflocken und Kirschtomaten als Belag f\u00fcr die Focaccia \u2013 ebenfalls nach Belieben<\/p>\n\n\n\n<p>Da ich wenig Zeit habe und meine Mutter eine hervorragende K\u00f6chin ist, habe ich f\u00fcr meine Kochleidenschaft leider meist nur wenig Zeit. Aber ich liebe es unheimlich, ausgiebige Fr\u00fchst\u00fccke und Gerichte mit Mehl zuzubereiten! Eines meiner Lieblingsrezepte ist diese Focaccia.<\/p>\n\n\n\n<p>Ich l\u00f6se die Hefe in lauwarmem Wasser auf, r\u00fchre um und \u201ef\u00fcttere\u201c sie mit etwas Honig. Ich warte, bis sich Blasen bilden (um zu sehen, ob meine Hefe lebt \u2013 daran bin ich fr\u00fcher schon mal gescheitert).<\/p>\n\n\n\n<p>Dann gebe ich etwas \u00d6l und Salz hinzu und r\u00fchre nach und nach das Mehl hinein, bis der Teig die gew\u00fcnschte Konsistenz erreicht hat. Mit einem speziellen Antihaftl\u00f6ffel verr\u00fchre ich den Teig, bis er richtig klebrig ist. Dann lasse ich ihn eine Stunde ruhen. Anschlie\u00dfend knete ich ihn noch einmal mit den H\u00e4nden durch. Ich knete den Teig nicht noch einmal ganz durch, eigentlich falte ich ihn nur noch einmal: Ich ziehe den Teig und falte.<\/p>\n\n\n\n<p>Dies wiederhole ich drei- oder viermal. Dann gebe ich den Teig in eine etwa 30 \u00d7 40&nbsp;cm gro\u00dfe Backform. Schlie\u00dflich verteile ich den Teig mit den Fingern auf dem Backblech und lasse ihn eine weitere Stunde gehen. Wenn er ausreichend aufgegangen ist, kommt der wundervolle Moment, in dem wir mit den Fingern die \u00fcbersch\u00fcssige Luft aus dem Teig dr\u00fccken.<\/p>\n\n\n\n<p>Und darauf kann ich eigentlich alles geben, was ich mag. Von Pesto \u00fcber Kirschtomaten, geriebenen K\u00e4se und Rosmarin (der beste Freund der Focaccia) bis hin zu Salzflocken. Ich backe sie bei Umluft und 200&nbsp;\u00b0C etwa eine halbe Stunde, bis sie die gew\u00fcnschte Farbe hat. Vor dem Backen gebe ich nat\u00fcrlich reichlich \u00d6l darauf.<\/p>\n\n\n\n<p>Das macht sie herrlich knusprig! Ich nehme sie heraus, lasse sie abk\u00fchlen und genie\u00dfe dann meine Focaccia. Dabei versuche ich nat\u00fcrlich, sie nicht alleine am selben Tag aufzuessen.
