Vom Herd nehmen und in der restlichen Fl\u00fcssigkeit ziehen lassen.<\/p>\n\n\n\n<p>Dann 500&nbsp;ml Milch, Zitronenabrieb, Zimtstange und Mastix in einen anderen Kochtopf geben. Bei sehr schwacher Hitze 5\u20137&nbsp;Minuten lang unter st\u00e4ndigem R\u00fchren erhitzen, bis die Milch das Aroma der Gew\u00fcrze und der Zitrone angenommen hat. Vom Herd nehmen und beiseitestellen.<\/p>\n\n\n\n<p>Den Backofen auf 220&nbsp;\u00b0C (Umluft) oder 200&nbsp;\u00b0C (Ober-\/Unterhitze) vorheizen.<\/p>\n\n\n\n<p>Die Speisest\u00e4rke in 280&nbsp;ml Milch einr\u00fchren. In einer gro\u00dfen Sch\u00fcssel das Eigelb mit dem Zucker schaumig schlagen. Die Mischung aus Milch und Speisest\u00e4rke nach und nach unterr\u00fchren, bis die Masse schaumig ist. Die aromatisierte Milch durch ein Sieb gie\u00dfen und Zitronenschale und Zimtstange entfernen. Die abgesiebte Milch langsam und unter st\u00e4ndigem R\u00fchren mit einem Schneebesen zur Eimasse geben.<\/p>\n\n\n\n<p>Die Mischung zur\u00fcck in den Kochtopf mit dem Reis geben, bei mittlerer bis niedriger Hitze unter st\u00e4ndigem R\u00fchren mit einem Holzl\u00f6ffel 8\u201310&nbsp;Minuten k\u00f6cheln lassen, bis die Masse andickt. Dabei darauf achten, dass der Reis nicht am Topfboden ansetzt und die Mischung nicht zu fest wird. Sie soll relativ fl\u00fcssig bleiben.<\/p>\n\n\n\n<p>Die Mischung auf 6&nbsp;ofenfeste F\u00f6rmchen verteilen. Diese in eine tiefe Auflaufform stellen und vorsichtig so viel hei\u00dfes Wasser einf\u00fcllen, dass es etwa bis zur H\u00e4lfte der F\u00f6rmchen reicht (darauf achten, dass der Milchreis nicht nass wird).<\/p>\n\n\n\n<p>Im vorgeheizten Backofen auf der zweiten Schiene von oben 25\u201330&nbsp;Minuten lang backen, bis sie etwas aufgehen und goldbraun werden. Etwas abk\u00fchlen lassen und nach Belieben mit gehackten \u00c4gina-Pistazien bestreuen.<\/p>\n\n\n\n<p>Lauwarm, bei Zimmertemperatur oder kalt
