Zutaten<\/strong>
1.200 g Auberginen, in 1 cm d\u00fcnne Scheiben geschnitten
1\u00bd kg Kartoffeln oder 2 gro\u00dfe S\u00fc\u00dfkartoffeln, in \u00bd cm d\u00fcnne Scheiben geschnitten
300 g Portobello-Pilze, in dicke Scheiben geschnitten
\u00bd TL Knoblauchpulver
Oliven\u00f6l
Salz und frisch gemahlener Pfeffer<\/p>\n\n\n\n

F\u00fcr die B\u00e9chamelsauce<\/strong>
100 g Oliven\u00f6l
100 g Allzweckmehl
1 l unges\u00fc\u00dfte Pflanzenmilch, Zimmertemperatur
Muskatnuss, gerieben
Salz und frisch gemahlener Pfeffer<\/p>\n\n\n\n

Zubereitung
<\/strong>Wir beginnen mit der Vorbereitung des Gem\u00fcses: Auberginen, S\u00fc\u00dfkartoffeln und Pilze in einer Schicht auf ein mit Backpapier ausgelegtes Backblech legen (bei Bedarf mehrere Backbleche verwenden), mit Oliven\u00f6l bestreichen und mit Salz, frisch gemahlenem Pfeffer, Thymianbl\u00e4ttern und Knoblauchpulver bestreuen. Im vorgeheizten Backofen bei 200 \u00b0C Ober- und Unterhitze ca. 25 Minuten lang backen, bis das Gem\u00fcse weich ist und etwas Farbe angenommen hat. Parallel dazu bereiten wir die B\u00e9chamelsauce zu: In einem Kochtopf das Oliven\u00f6l erhitzen. Das Mehl hinzugeben und 2\u20133 Minuten lang ununterbrochen mit einem Schneebesen r\u00fchren, bis es leicht gebr\u00e4unt ist. Nach und nach die Pflanzenmilch hinzuf\u00fcgen, dabei kontinuierlich mit dem Schneebesen r\u00fchren, damit keine Klumpen entstehen. Salz, frisch gemahlenen Pfeffer und Muskatnuss hinzuf\u00fcgen und umr\u00fchren. Die Hitze etwas reduzieren und 7\u20138 Minuten lang mit dem Schneebesen weiterr\u00fchren, bis die Mischung eindickt. Eine Auflaufform oder ein Backblech mit etwas Oliven\u00f6l einfetten und die Auberginen, S\u00fc\u00dfkartoffeln und Pilze abwechselnd hineinschichten. Mit der B\u00e9chamelsauce bedecken. Die Moussaka im vorgeheizten Backofen bei 200 \u00b0C Ober- und Unterhitze ca. 30 Minuten lang backen.<\/p>\n","protected":false},"excerpt":{"rendered":"
