{"id":16520,"date":"2025-12-01T09:59:15","date_gmt":"2025-12-01T09:59:15","guid":{"rendered":"https:\/\/portal.greekfarms.gov.gr\/?p=16520"},"modified":"2026-01-07T11:25:09","modified_gmt":"2026-01-07T11:25:09","slug":"der-knoblauch","status":"publish","type":"post","link":"https:\/\/portal.greekfarms.gov.gr\/de\/der-knoblauch\/","title":{"rendered":"Der Knoblauch"},"content":{"rendered":"\n<p><strong><em>Soultana Maria Valamoti, Professor, School of History and Archaeology, Aristotle University of Thessaloniki<\/em><\/strong><\/p>\n\n\n\n<p>Knoblauch ist aus arch\u00e4ologischen Siedlungen im Mittelmeerraum bekannt, allerdings sind direkte \u00dcberreste in Form von Zehen oder Knoblauchknollen selten, da sie in arch\u00e4ologischen Lagerst\u00e4tten nur selten erhalten bleiben. Trotz der Schwierigkeiten bei der Konservierung und Identifizierung in arch\u00e4ologischen Funden wurden Reste von Knoblauch im pr\u00e4historischen Griechenland aus der Bronzezeit gefunden. Arch\u00e4ologische Ausgrabungen brachten 21&nbsp;verkohlte Knoblauchzehen in einem Raum in der pr\u00e4historischen Siedlung Tsougiza bei Nemea hervor, die auf etwa 1500 v.&nbsp;Chr. datiert werden, also die Sp\u00e4tbronzezeit. Etwas \u00e4lter sind die drei Knoblauchzehen, die in Akrotiri auf Santorin in einer Vase gefunden wurden. Valamoti<\/p>\n<\/div><\/div>\n\n\n\n<p>Linguistische Belege lassen darauf schlie\u00dfen, dass Knoblauch eine aus dem Osten eingef\u00fchrt wurde. Die \u00fcblichen Bezeichnungen f\u00fcr den Knoblauch im antiken Griechenland (&#8222;<em>Skordon<\/em>\u201c und h\u00e4ufiger \u201e<em>Skorodon<\/em>\u201c) sind fast identisch mit dem heutigen neugriechischen Wort \u201eSkordo\u201c. Diese beiden W\u00f6rter finden sich in altgriechischen Texten aus historischer Zeit ab dem 5.&nbsp;Jhd. v.&nbsp;Chr. Gleichzeitig tauchten jedoch auch die W\u00f6rter <em>Aglis<\/em> und <em>Gelgis<\/em> auf, mit den Bedeutungen \u201eKnoblauchknolle\u201c bzw. \u201eKnoblauchzehen\u201c. Diese beiden W\u00f6rter gelten als akkadischen Ursprungs und stehen als \u00dcberbleibsel viel \u00e4lterer Begriffe aus einem uns weitgehend unbekannten sprachlichen Substrat in der altgriechischen Sprache. Akkadisch war von 1500 bis 500 v.&nbsp;Chr. die g\u00e4ngige Verwaltungssprache und Lingua franca im Nahen Osten und somit unterstreicht der \u00f6stliche Ursprung der W\u00f6rter <em>Aglis<\/em> und <em>Gelgis<\/em> die ausl\u00e4ndische Herkunft von Knoblauch in der \u00c4g\u00e4isregion und in Griechenland. Auf der Grundlage arch\u00e4obotanischer Daten wird davon ausgegangen, dass die Einf\u00fchrung von Knoblauch in Griechenland sp\u00e4testens im 2.&nbsp;Jahrtausend v.&nbsp;Chr. erfolgte, und zwar im Rahmen der Kontakt- und Handelsnetzwerke w\u00e4hrend der Bronzezeit, insbesondere w\u00e4hrend der mykenischen Zeit, zwischen Griechenland und die \u00c4g\u00e4is einerseits und den Kulturen des \u00f6stlichen Mittelmeerraums, Kleinasiens und des Nahen Ostens andererseits.<\/p>\n\n\n\n<p>Hinweise auf Knoblauch gibt es in antiken griechischen Texten viele. Im 5.&nbsp;Jahrhundert v.&nbsp;Chr. findet sich das Wort in einer Passage von Sophokles, und bei dem antiken Historiker Herodot finden sich Hinweise darauf. Hinweise auf Knoblauch finden sich in technischen Abhandlungen, die Informationen zur Morphologie und zum Anbau von Knoblauch liefern, in den Werken von Theophrastus (4.\u20133.&nbsp;Jahrhundert v.&nbsp;Chr.) <em>\u00dcber die Geschichte der Pflanzen<\/em> und <em>\u00dcber die Entstehung der Pflanzen<\/em>. Au\u00dferdem ist Knoblauch in antiken Kom\u00f6dien \u00e4u\u00dferst h\u00e4ufig vertreten, wie etwa in den Kom\u00f6dien des Aristophanes (5.\u20134.&nbsp;Jahrhundert v.&nbsp;Chr.). Diese Hinweise auf Knoblauch in der komischen Dichtung zeigen, dass Knoblauch ein weit verbreitetes und beliebtes Nahrungsmittel war, das insbesondere den unteren sozialen Schichten leicht zug\u00e4nglich war. Auch in antiken medizinischen Texten finden sich zahlreiche Hinweise darauf, dass Knoblauch in zahlreichen Anweisungen als f\u00fcr verschiedene Krankheiten geeignet oder verboten erw\u00e4hnt wird, beispielsweise in den hippokratischen Texten (5.\u20134.&nbsp;Jahrhundert v.&nbsp;Chr.), im Werk des Dioskurides <em>Materia medica<\/em> (1.&nbsp;Jahrhundert n.&nbsp;Chr.) und im Werk des Galen (2.&nbsp;Jahrhundert n.&nbsp;Chr.).<\/p>\n\n\n\n<p>Auch heute noch wird Knoblauch in Griechenland vielerorts angebaut, wobei lokale Sorten aus der lokalen Agrar- und Ern\u00e4hrungswirtschaft hervorgegangen sind, wie Knoblauch aus Vyssa in Thrakien, Knoblauch aus Platykampos in Thessalien, Knoblauch aus Tripolis usw. Knoblauch ist auch heute noch eine beliebte Zutat in vielen Rezepten und so auch die Hauptzutat der Skordalia, die in vielen Variationen in verschiedenen lokalen K\u00fcchen des Landes zu finden
