Im Laufe der Bronzezeit (4.\u20132.&nbsp;Jahrtausend v.&nbsp;Chr.) kamen auch andere Arten hinzu, wie Saubohnen, verschiedene andere Arten Platterbsen und seltener auch Kichererbsen. Im Laufe der historischen Zeit (1.&nbsp;Jahrtausend v.&nbsp;Chr.) erfreuen sich neben den Linsen, die seit dem 7.&nbsp;Jahrtausend v.&nbsp;Chr. in Griechenland angebaut und verzehrt werden, auch Kichererbsen gro\u00dfer Beliebtheit. Gleichzeitig kamen neue H\u00fclsenfruchtarten hinzu, wie etwa Lupinen und eine Bohnenart namens <em>Dolichos<\/em> oder <em>Phasalos<\/em>. Valamoti, 2025<\/p>\n<\/div><\/div>\n\n\n\n<p>Die Identit\u00e4t von <em>Dolichos<\/em> l\u00e4sst sich anhand der wenigen klassischen Texte, in denen der Begriff vorkommt, nur schwer feststellen. Philologen nehmen an, dass <em>Dolichos<\/em> ein Synonym f\u00fcr <em>Phaselos<\/em> ist. Beschreibungen der Pflanze, die dem Wort <em>Dolichos<\/em> entspricht, finden sich im Werk von Theophrastus (4.\u20133.&nbsp;Jahrhundert v.&nbsp;Chr.) <em>\u00dcber die Geschichte der Pflanzen<\/em>. Hier wird erw\u00e4hnt, dass die Pflanze Fr\u00fcchte tr\u00e4gt, wenn lange St\u00fctzst\u00e4be angebracht werden. Er stellt au\u00dferdem fest, dass sich <em>Dolichos<\/em> als Pflanze von den anderen bekannten H\u00fclsenfr\u00fcchten seiner Zeit, n\u00e4mlich Kichererbsen, Wicklinsen, Linsen, Ochros, Erbsen, Platterbsen, Saubohnen und Lupinen unterscheidet. Daraus wird der Schluss gezogen, dass es sich um eine kletternde H\u00fclsenfrucht handelt, die beim Anbau zur Erzeugung von Saatgut abgest\u00fctzt werden muss. Der Begriff <em>Dolichos<\/em> findet sich erstmals in hippokratischen Texten (5.\u20134.&nbsp;Jahrhundert v.&nbsp;Chr.), wo er zusammen mit Ochros (einer Platterbsenart) als zwei nahrhaftere und leichter verdauliche Arten im Vergleich zu Saubohnen und Erbsen erw\u00e4hnt wird. Theophrastus z\u00e4hlt bei seinen positiven ern\u00e4hrungsphysiologischen Eigenschaften auch die Tatsache auf, dass es im Vergleich zu anderen H\u00fclsenfr\u00fcchten weniger Bl\u00e4hungen beim Verzehr verursacht. Der Kom\u00f6diendichter Anaxandrides (4.&nbsp;Jahrhundert v.&nbsp;Chr.) f\u00fchrt Dolichos neben Saubohnen, Platterbsen und Ochrus in einer Liste von H\u00fclsenfr\u00fcchten auf. Zur Zeit Galens scheint das Wort <em>Dolichos<\/em> dem <em>Phaselos<\/em> zu entsprechen, einer H\u00fclsenfrucht, die zum Wachsen eine Rankhilfe ben\u00f6tigt. In antiken Texten gibt es nur wenige Hinweise auf <em>Dolichos<\/em> und diese deuten darauf hin, dass die Samen dieser H\u00fclsenfrucht auf die gleiche Weise gekocht wurden wie die anderer H\u00fclsenfr\u00fcchte, von denen die meisten seit der Jungsteinzeit bekannt waren.<\/p>\n\n\n\n<p>Heute sind Augenbohnen in Form von getrockneten Samen im Handel erh\u00e4ltlich, obwohl sie meist aus anderen Teilen der Welt importiert werden. Sie sind allerdings eine sehr beliebte Zutat in traditionellen griechischen Gerichten und werden auf verschiedene Arten zubereitet. So wird aus der Region Sanda im Pontus \u201eMavromatosirv\u201c erw\u00e4hnt, ein Rezept mit Augenbohnen und Weizenschrot (Korkoto); auf dem Peloponnes, den Kykladen und einigen ionischen Inseln werden sie mit Mangold oder anderem Gem\u00fcse zubereitet (Myronolakhana). Aus Limnos wird ein Rezept f\u00fcr Skordalia mit Augenbohnen erw\u00e4hnt, das den Einfallsreichtum der traditionellen K\u00fcche beim Kombinieren lokaler Zutaten auf vielf\u00e4ltige und
