{"id":15368,"date":"2025-07-09T07:44:13","date_gmt":"2025-07-09T07:44:13","guid":{"rendered":"https:\/\/portal.greekfarms.gov.gr\/?p=15368"},"modified":"2026-01-07T10:26:25","modified_gmt":"2026-01-07T10:26:25","slug":"suessspeisen-mit-mohn","status":"publish","type":"post","link":"https:\/\/portal.greekfarms.gov.gr\/de\/suessspeisen-mit-mohn\/","title":{"rendered":"S\u00fc\u00dfspeisen mit Mohn"},"content":{"rendered":"\n<p><em><strong><em><strong>Soultana-Maria Valamoti<\/strong><\/em>,<em><strong> Professor, School of History and Archaeology, Aristotle University of Thessaloniki<\/strong><\/em><\/strong><\/em><\/p>\n\n\n\n<p>Ein Pasteli oder eine andere S\u00fc\u00dfspeise mit Mohnsamen anstelle von Sesamsamen w\u00fcrde im modernen Griechenland sehr seltsam erscheinen, schlie\u00dflich findet man weder in den st\u00e4dtischen K\u00fcchen des Landes noch in den vielen interessanten B\u00fcchern \u00fcber die lokale K\u00fcche diese Zutat in S\u00fc\u00dfspeisen. Ein Blick zur\u00fcck in die ferne Vergangenheit, wie durch antike Texte und arch\u00e4obotanische Funde belegt, zeigt jedoch, dass Mohnsamen im antiken Griechenland eine sehr beliebte Zutat waren, wobei der Schwerpunkt hier auf S\u00fc\u00dfspeisen lag. Mohn als lang anhaltend schlaff\u00f6rdernde Pflanze, also die zur Opiumproduktion angebaute Art, war eine Grundpflanze der jungsteinzeitlichen Gesellschaften Europas. In Griechenland hingegen fand sich um das 2.&nbsp;Jahrtausend v.&nbsp;Chr. eine systematisch angebaute und in H\u00e4usern gelagerte Art, wie arch\u00e4ologische Forschungen ergeben haben, insbesondere in Nordgriechenland, wo gro\u00dfe Ansammlungen von Mohnsamen gefunden wurden.<br><br>Die \u00e4lteste Erw\u00e4hnung des Schlafmohns findet sich in Homers Ilias in einem Vergleich und in Verbindung mit Brot findet sich das Wort bereits im 7.&nbsp;Jahrhundert v.&nbsp;Chr. in einer Passage von Alkmanas, in der es um <em>makanisches<\/em> Brot geht. Antike Texte erw\u00e4hnen Mohnsamen als Zutat in Backwaren sowie in S\u00fc\u00dfspeisen. Dioskurides (1.&nbsp;Jahrhundert n.&nbsp;Chr.) erw\u00e4hnt in seinem Buch <em>\u00dcber die Heilmittel<\/em> eine Kulturmohnsorte mit wei\u00dfen Samen, die in den G\u00e4rten wegen dieses Samens angebaut wurde. Der Samen wird im Rahmen einer gesunden Ern\u00e4hrung in Brot gebacken oder anstelle von Sesam mit Honig vermischt. Die Kombination von Mohnsamen mit Honig wird auch von Thukydides (5.&nbsp;Jahrhundert v.&nbsp;Chr.) erw\u00e4hnt, der auch die Nahrung erw\u00e4hnte, die den spartanischen Kriegern in Sphakteria w\u00e4hrend des Peloponnesischen Krieges geschickt wurde. Mehrere Ausz\u00fcge aus den Werken der Kom\u00f6diendichter des 4.&nbsp;und des 3.&nbsp;Jahrhunderts v.&nbsp;Chr. beziehen sich auf Mohnsamen, so wird beispielsweise in einer Passage von Euphron (3.&nbsp;Jahrhundert v.&nbsp;Chr.) davon gesprochen, einen Rettich mit 12 Mohnsamen zu bestreuen. Abgesehen von der Ironie dieses Bildes finden wir Mohnsamen als Zutat eines Honigdesserts (Melipekton), einer \u201eKopte\u201c mit Mohnsamen, in einer Passage von <em><strong>Sopater<\/strong><\/em> (4.\u20133.&nbsp;Jahrhundert v.&nbsp;Chr.). Die hippokratischen Texte (5.\u20134.&nbsp;Jahrhundert v.&nbsp;Chr.) beschreiben Mohnsamen als nahrhaft und st\u00e4rkend und erw\u00e4hnen auch ihre therapeutischen Eigenschaften. Mohnsamen werden auch als Zutat in einem von Philo (3.\u20132.&nbsp;Jahrhundert v.&nbsp;Chr.) aufgezeichneten Rezept erw\u00e4hnt, das sich auf das sogenannte Epimenides-Rezept bezieht, eine Art Energieriegel, wie wir ihn heute nennen w\u00fcrden, mit vielen Zutaten!<br><br>So k\u00f6nnen wir uns Mohnbr\u00f6tchen, Mohngeb\u00e4ck oder ein spezielles Pasteli, bei dem Sesam durch Mohn ersetzt wird, als Delikatessen im antiken Griechenland vorstellen. Um heute Geb\u00e4ck oder S\u00fc\u00dfspeisen mit Mohnsamen zu finden, m\u00fcssen wir in die n\u00f6rdlichen Regionen Europas, zum Beispiel nach Litauen, in die Ukraine oder in mitteleurop\u00e4ische L\u00e4nder. Die kulinarische Verwendung von Mohnsamen ist im Laufe der Jahrhunderte aus der Tradition der griechischen Bev\u00f6lkerung verloren gegangen, ganz im Gegensatz zu anderen Zutaten und
