{"id":14233,"date":"2025-07-23T15:09:01","date_gmt":"2025-07-23T15:09:01","guid":{"rendered":"https:\/\/portal.greekfarms.gov.gr\/?p=14233"},"modified":"2025-12-22T20:18:44","modified_gmt":"2025-12-22T20:18:44","slug":"pfannkuchen","status":"publish","type":"post","link":"https:\/\/portal.greekfarms.gov.gr\/de\/pfannkuchen\/","title":{"rendered":"Pfannkuchen"},"content":{"rendered":"\n<p><strong><em>Sultana Maria Valamoti, <strong><em>Professor, School of History and Archaeology, Aristotle University of Thessaloniki<\/em><\/strong><\/em><\/strong><\/p>\n\n\n\n<p>Die Bratpfanne, die wir heute sowohl in der griechischen als auch in der internationalen K\u00fcche bestens kennen, war schon im antiken Griechenland f\u00fcr bestimmte Rezepte bekannt und beliebt, und trug sogar damals schon den gleichen Namen wie heute: <em>Tiganon<\/em>. Sie wird oft als Kochgef\u00e4\u00df zum Frittieren kleiner Fische beschrieben, sie wurde aber auch f\u00fcr andere Zubereitungen wie Pfannkuchen eingesetzt. Die Idee, Teig in hei\u00dfem \u00d6l zu frittieren, besteht mindestens seit dem antiken Griechenland und k\u00f6nnte noch viel \u00e4lter sein. Schlie\u00dflich wurden bereits in pr\u00e4historischen Siedlungen der Jungsteinzeit flache, offene Keramikgef\u00e4\u00dfe gefunden.<\/p>\n\n\n\n<p>Getreideanbau in Griechenland hat eine lange Geschichte. Seit dem 7.&nbsp;Jahrtausend v.&nbsp;Chr. werden zahlreiche verschiedene Arten von Weizen und Gerste angebaut. Diese beiden waren Grundnahrungsmittel der Griechen und wurden seit pr\u00e4historischer Zeit durch das Mischen der gemahlenen Samen in Form von Mehl mit verschiedenen Zutaten wie Wasser, Milch, Wein und Honig in eine gro\u00dfe Vielfalt an Rezepten verwandelt. Antike Teige konnten auf verschiedene Weise in Brote oder Kuchen gebacken werden, einschlie\u00dflich einer Reihe von Rezepten, bei denen der Teig in hei\u00dfem \u00d6l gebacken wurde. Diese sind Rezepte f\u00fcr Pfannkuchen in verschiedenen Formen.<\/p>\n\n\n\n<p>Das altgriechische Wort <em>Tiganitis<\/em> (Pfannkuchen) findet sich bereits im 6.&nbsp;Jahrhundert v.&nbsp;Chr. im Werk des Dichters Hipponax und sp\u00e4ter auch in antiken Kom\u00f6dien. In antiken Kom\u00f6dien finden sich sogar Hinweise auf Pfannkuchen mit Sesam, was an die kretischen Xerotigana erinnert. Das Wort <em>Tiganitis<\/em> bezeichnet einen Teig, der in einer Pfanne mit \u00d6l oder einem anderen Fett gebraten wurde. Galen beschreibt in seinem Werk sogar die Zubereitungsart. Dem Arzt der Antike nach wurde f\u00fcr die Pfannkuchen eine Bratpfanne auf ein rauchfreies Feuer gestellt. Dann wurde \u00d6l hineingegeben und sobald das \u00d6l hei\u00df genug war wurde der Teig hineingegossen. Aus der Beschreibung geht hervor, dass dieser Teig sehr d\u00fcnnfl\u00fcssig war, da Galen ihn als eine Mischung aus Weizenmehl und viel Wasser beschreibt. Er berichtet, dass dieser Teig beim Ausbacken in \u00d6l schnell die Konsistenz \u00e4ndert und an weichen K\u00e4se in K\u00f6rben erinnert. Nach Galens Angaben muss der Teig an dieser Stelle gewendet werden, um auch die Unterseite zu garen. Dieser Vorgang wird zwei oder drei Mal wiederholt, bis der Pfannkuchen fertig gebacken ist.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sultana Maria Valamoti, Professor, School of History
