Einige davon werden hier seit Jahrtausenden angebaut, und es ist \u00fcberzeugend argumentiert worden, dass die kultivierten Platterbsen der \u00c4g\u00e4is den Beitrag der Region zur Gruppe der Pflanzen darstellen, die Menschen seit dem 7.&nbsp;Jahrtausend v.&nbsp;Chr. domestiziert und kultiviert haben.<\/p>\n\n\n\n<p>Das arch\u00e4obotanische Material belegt das Vorkommen einer dieser Arten, <em>Lathyrus sativus<\/em>, einer Platterbsenart mit beeindruckenden Bl\u00fcten in verschiedenen Blaut\u00f6nen, bereits im ersten Jahrtausend der Jungsteinzeit. Ihre verbrannten Samen wurden f\u00fcr den Verzehr gelagert in neolithischen H\u00e4usern in Makedonien gefunden, beispielsweise in Servia und Dikili Tash, sowie in arch\u00e4ologischen St\u00e4tten in S\u00fcdgriechenland, wie Ftelia auf Mykonos. In der Bronzezeit wurden noch zwei weitere Platterbsenarten im \u00c4g\u00e4israum angebaut. Der Afkos von Limnos (<em>Lathyrus ochrus<\/em>) und die Fava von Santorin (<em>Lathyrus clymenum<\/em>).<\/p>\n\n\n\n<p>Altgriechische Texte erw\u00e4hnen <em>Lathyros<\/em>, allerdings l\u00e4sst sich aus den Beschreibungen in den Texten nicht mit Sicherheit schlie\u00dfen, welche der in Griechenland kultivierten Platterbsenarten, Lathiri (<em>Lathyrus sativus<\/em>), Afkos von Limnos (<em>Lathyrus ochrus<\/em>) oder die Fava von Santorin (<em>Lathyrus clymenum<\/em>), dem antiken Wort <em>Lathyros<\/em> entsprechen. W\u00e4hrend es f\u00fcr <em>Ochros<\/em> ein \u00fcberzeugendes Argument daf\u00fcr gibt, dass er der Art <em>Lathyrus ochrus<\/em> entspricht, ist es bei den altgriechischen W\u00f6rtern <em>Lathyros<\/em>, <em>Arakos<\/em> und <em>Afaki<\/em> nicht leicht, den W\u00f6rtern bestimmte Pflanzenarten zuzuordnen. Man k\u00f6nnte annehmen, dass das antike Wort <em>Lathyros<\/em> dem heutigen <em>Lathouri<\/em> oder <em>Lathiri<\/em> entspricht, w\u00e4hrend <em>Arakos<\/em> der Fava von Santorin entspricht, da auch heute noch die Platterbsen auf Santorin <em>Arakas<\/em> genannt werden.<\/p>\n\n\n\n<p>In jedem Fall aber geben die altgriechischen Texte Aufschluss \u00fcber einen ganz wichtigen Aspekt einer Kategorie von H\u00fclsenfr\u00fcchten: Sie wurden in einem gelben, dicken Brei gekocht, einem <em>Etnos Lekithodes<\/em>, also einer dotterfarbenen Speise. Diese Verbindung von Farbe und Konsistenz erw\u00e4hnte Phainias im 4.&nbsp;Jahrhundert v.&nbsp;Chr. und gab als Beispiel einer so zubereiteten H\u00fclsenfrucht den <em>Arakos<\/em>. Dieser gelbliche Brei aus antiken Texten entspricht mit ziemlicher Sicherheit der Fava, der heute in vielen Regionen Griechenlands \u00fcblichen Zubereitungsart der drei kultivierten Platterbsensorten. Dies ist ein antiker Beitrag zur griechischen Gastronomie mit Wurzeln in der Vorgeschichte. Gleich ob der Afkos von Limnos, die Fava von Santorin oder das Lathiri von Limnos, Korfu und Livadia \u2013 allen drei kultivierten Platterbsensorten Griechenlands ist die gelbe Farbe der Keimbl\u00e4tter gemeinsam, die beim Aufbrechen des Samens und beim Entfernen der Schale zum Vorschein kommen.
